Winter spinach. Shooting these gorgeous greens and I just had to have a little snacky snack. I have been dying to make this spinach pasta sauce from (it helps to have home made pasta dough ready to go in the freezer 😉).

This dish was so simple and delicious... I’m dreaming of adding some crumbled prosciutto crisps to my garlic bread crumb next time!

Plenty more 🌱 spinach pics to come. Have a stellar weekend!

One of the virtues is Jerusalem artichoke is as a low GI substitute for potato, a delicious boon to diabetics. This version was made with stock rather than cream. It lightens the result and allows the sweet-earthy notes to shine.

Day 2 of what to do with all these Jerusalem Artichokes… chips. A flashback to my fine dining cheffy days when everything had a purée, a fluid gel and a crisp. The 3 secrets to perfect sunchoke chips is a thin even slice, super fresh oil and a constant low temp of 160°C. Sweet golden crispy goodness ❤️

Personal challenge

My comfort level shooting people in action is very low. As a chef and food photographer, I am accustomed to having a high degree of control. Food pretty much does what I want. Always.

On my recent trip I challenged myself to relinquish that and view my world differently. We each carry a veil of privacy around us, lost in our own own thoughts in time. To relax and capture that is was whole new experience for me.

It’s like wearing a new pair of glasses.

One of the problems with having a few weeks in Paris living down the street from an old school charcutiere is you get accustomed to having amazing pate and terrines on hand.

Time to break out the tool kit and DIY this weekend.
