Layered Greek Salad Pasta Jars 🍅🥬🇬🇷

If you hate soggy salads, look no further than these Greek Pasta Salad Jars. They’re packed with flavor, color, and crunchy veggies, and will stay fresh in your fridge for days.

The key is layering the salad the right way - dressing always goes at the bottom, then pasta and proteins, then veggies on top.

Ingredients:
Salad
▢50 g pasta of choice
▢½ cup cooked chickpeas, drained and rinsed. I use chickpeas from a can
▢½ cup cucumber, diced
▢½ cup cherry tomatoes, halved
▢½ cup bell pepper, diced. I used yellow bell pepper for more color
▢¼ cup kalamata olives, halved
▢¼ cup crumbled feta cheese, use dairy-free if needed
▢2 tablespoons red onion, finely diced
Dressing
▢1 tablespoon olive oil
▢1 tablespoon red wine vinegar
▢1 tablespoon lemon juice
▢1 teaspoon Dijon mustard
▢¼ teaspoon dried oregano
▢¼ teaspoon garlic powder
▢Pinch of salt
▢Freshly cracked black pepper, to taste

Homemade Ketchup with NO refined sugar! 🍅🍕

Ditch the store-bought ketchup loaded with preservatives and try this cleaner homemade version instead! Made with simple, wholesome ingredients and no refined sugars, this recipe brings out rich, natural flavors without any unnecessary additives.

Ingredients
▢6 oz tomato paste, double concentrated
▢½ cup water
▢⅓ cup white or apple cider vinegar
▢2 tablespoons maple syrup or to taste
▢1 teaspoon onion powder
▢1 teaspoon garlic powder
▢¼ teaspoon salt

Instructions
1. Add all of the ingredients to a small saucepan. Bring to a simmer and cover with a lid. Cook for 20 minutes on medium-low heat, or until the mixture thickens and coats the back of a spoon. Make sure to stir every 5 minutes or so to prevent burning.
2. Transfer the mixture to a jar and let cool to room temperature. For best results, refrigerate overnight so that the flavors can intensify. Store in the fridge for up to 2 weeks and sometimes longer.

Hello, friends!
Is anyone else a big snacking person? I definitely am.
And something that I LOVE is crackers! For a long time I could not find a recipe that is easy and quick enough to prepare. They all require rolling a dough and time that I don't have.
This is one of the recipes I really like, because it takes 10 minutes and 1 bowl to prepare. I serve them with hummus, on the picture I have spinach and red pepper hummus which was amazing. Hope you like it!
