As y’all know, I love pasta! Decided to make some maple curry pasta for din tonight…everything was prepped and ready to roll, then I realized I didn’t have any penne pasta, which I’d normally use in this dish. Linguine it is! Still tasty, just not quite the same. 😒 Note to self, check the pantry before starting dinner. 🤣

Have I ever told you how much I love egg noodles? 😋
For Meatless Monday, egg noodles are a great substitute. Tossed with mushrooms, yellow pepper, shallots, garlic, olives, baby spinach and goat cheese feta…oh and some of yesterday’s marina sauce, this is a protein packed dish that took all of 15 minutes to whip up.

Roasted 30+ pounds of Roma tomatoes and turned them into the most delectable marinara sauce with fresh basil and garlic. 🤤 Can’t wait to make some delicious dishes with this sauce.

This year was the 25th anniversary of The Sopranos, and I just finished rewatching it. I felt like some baked ziti was due for Sunday dinner. I started everything and realized I didn’t have any ziti, so I made it with large “shells”. Also used hot Italian sausage and some beautiful ricotta and mozzarella. 🤤
