Sunlight filtered through teak shutters, painting golden patterns across the century-old timber floor of the heritage room. Deep in Thekkady’s spice-scented hills, the ancient walls whispered stories of colonial planters and misty mornings. Outside, cardamom and pepper filled the humid breeze.
Standing on the creaking wooden stairs, I wrapped myself in the familiar folds of handloom cotton. As the soft fabric settled against my skin, a profound sense of calm anchored me. The saree—cool, graceful, and timeless—became my sanctuary within these historic walls. Against a backdrop of fading photographs and brass lamps, its familiar drape bridged centuries, offering quiet comfort in the lap of living history.

Outside, the heavy monsoon rain poured down, creating a lazy afternoon of doing absolute nothing except lingering in the kitchen and sharing endless gossips with Maa..
She reached for her cherished old silver aluminum kadai, a worn vessel strictly reserved only for cooking fish. Before marinating with turmeric & salt, she carefully checked the pohala macha again, making absolutely sure it was cleaned properly from head to tail.
She fried each piece until golden brown, filling the humid air with a rustic aroma. Then, she prepared pohala machara jholo, gently sliding the fried fish into a simmering broth spiced with only the barest essentials. With that rich, earthy smell drifting through every corner of the house, my hunger pangs grew worse by the second.
Finally, I was served a simple plate of hot white rice drenched in the fragrant fish curry. In that singular moment of pure culinary bliss, I easily ignored every single side item on the dining table, completely lost in the warm nostalgia of a perfect monsoon afternoon…

A memorable evening at The Sicilian, Mall of Asia, Bengaluru, Siciliana made even more special by sharing it with the chef himself. Every conversation was filled with food stories, passion, and plenty of laughter. The meal began with the stunning Edamame Arancini, crisp outside and wonderfully flavorful within. The Black & Bianca charcoal sourdough Neapolitan pizza was exceptional—light, airy, beautifully fermented, and finished with the perfect crust. The ravioli was comforting and delicately balanced, while the Imperial Highball with gin, elderflower, lemon, cucumber, and soda was refreshingly elegant. The finale was a mind-blowing tiramisu with Coffee liquor sauce that was the perfect sweet ending.
A heartfelt thank you to my chef friend Sabyasachi Gorai for curating such an outstanding menu and creating an experience that celebrated Italian flavours. Your food speaks for itself, and it was a pleasure hearing the stories behind it.

Childhood food memories quietly shape the way we see comfort, celebration, and home. Long before we understand recipes, we learn that certain flavours carry people, places, and emotions with them.

There’s something about Alo Chop that instantly takes me back to childhood evenings in Odisha. While singada and alo chop are the most common tea-time snacks, my heart has always belonged to the flat, crispy alo chop with its thin golden coating. The real magic began when it was crumbled into a bowl of murhi ( puffed rice ) mixed with freshly chopped onions green chilies and the mixture . One bowl, many hands, endless laughter.

One of the most enduring misconceptions about Odisha is that its people eat only fish ! While fish has long been part of the coastal foodscape, it is only one thread in a far richer culinary tapestry. The true soul of Odia cuisine is equally, if not more, evident in its extraordinary vegetarian traditions.
Across generations, Odia households have developed a remarkable understanding of vegetables, using them with ingenuity and restraint. A single ingredient often finds many identities.
Let’s talk about the green banana, for instance, becomes rai, bhaja, enriches dalma, forms part of ghanta, and in my home, even its peel is transformed into a chutney . Such practices reflect a cuisine shaped by seasonality, resourcefulness, and deep culinary wisdom.

Nowhere is this philosophy preserved more magnificently than in the sacred kitchen of Lord Jagannath, where centuries-old recipes continue to live through Mahaprasad. Every preparation carries with it layers of history, ritual, and collective memory. The sheer diversity of dishes prepared in the Jagannath Temple kitchen is unparalleled in India. No other temple offers such an extensive repertoire of cooked vegetarian preparations, where hundreds of recipes are preserved through centuries-old traditions and ritual.

Every dish at Gaia’s Elevated Dining GAIA - Global Vegetarian – Conversations Vol. 1 began with a memory, turning a 10-course vegetarian tasting menu into a collection of deeply personal stories served on a plate.

The Raw Mango Sphere beautifully captured childhood summers, while the delicate Ruby Beet Carpaccio proved that vegetables can be every bit as elegant as their classic inspirations.
The crystal-clear Rasam Consommé was comfort in its purest form, and Not Your Puchka cleverly reimagined a familiar street favourite with playful flavours.

The Dhabeli Popsicle, presented dramatically on edible paper, was one of the most memorable courses—nostalgic, interactive, and brilliantly executed.
The Tandoori Smoked Nendran celebrated Kerala’s beloved banana with remarkable depth.
The undisputed showstopper was the Lotus Stem Nihari—rich, patient, and astonishingly close to the soul of a traditional nihari.
The Jackfruit Biryani followed with beautifully layered aromas and texture.
I absolutely loved the refreshing Sorbet, a perfect palate cleanser, before ending with the unforgettable Miso Mysore Pak, where sweet, savoury and umami came together in perfect harmony. A meal where every course fed both memory and imagination.
