Classic Japanese Tonkatsu Sauce
Ingredients:

1/2 cup ketchup
1/4 cup Worcestershire sauce
1/4 cup soy sauce
1/4 cup mirin (sweet rice wine)
2 tablespoons sugar
1 tablespoon Dijon mustard
1 clove garlic, minced
1/4 teaspoon ground ginger
Directions:

In a small saucepan, combine all ingredients: ketchup, Worcestershire sauce, soy sauce, mirin, sugar, Dijon mustard, minced garlic, and ground ginger.
Cook over medium heat, stirring occasionally, until the mixture comes to a simmer.
Reduce the heat to low and continue to cook for 5-7 minutes, allowing the flavors to meld together. Stir frequently to prevent the sauce from sticking to the bottom of the pan.
Once the sauce has thickened slightly, remove from heat and let it cool.
Serve the Tonkatsu Sauce warm or at room temperature, drizzled over fried pork cutlets, or as a dipping sauce for your favorite Japanese dishes.

Ingredients:

- 2 cups chicken or vegetable broth
- 1/2 cup coconut milk
- 2 tablespoons tom yum paste
- 2 cloves garlic, minced
- 1 tablespoon grated ginger
- 1/2 cup mixed mushrooms (button, oyster, shiitake)

Instructions:

1. In a large pot, combine broth, coconut milk, tom yum paste, garlic, and ginger. Bring to a boil, then reduce heat and simmer for 5 minutes.
2. Add mushrooms, tomatoes, lemongrass, and cilantro. Cook for an additional 5-7 minutes or until vegetables are tender.

Amish Broccoli Salad

Ingredients:
6 cups fresh broccoli florets
1 cup shredded cheddar cheese
1/2 cup red onion, finely chopped
1/2 cup sunflower seeds
1/2 cup raisins
8 slices bacon, cooked and crumbled
For the Dressing:
1 cup mayonnaise
2 tablespoons apple cider vinegar
1/4 cup granulated sugar
Salt and pepper to taste

Directions:
In a large bowl, combine the broccoli florets, shredded cheddar cheese, chopped red onion, sunflower seeds, raisins, and crumbled bacon.
In a small bowl, whisk together the mayonnaise, apple cider vinegar, and sugar until smooth. Season with salt and pepper to taste.
Pour the dressing over the broccoli mixture and toss to coat evenly.

Traditional Mexican Buñuelos

Ingredients:
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons granulated sugar
2 tablespoons unsalted butter, melted
3/4 cup warm water
Vegetable oil, for frying
For the Sugar Coating:
1/2 cup granulated sugar
1 teaspoon ground cinnamon

Directions:
In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar.
Add the melted butter and gradually mix in the warm water to form a smooth, elastic dough.
Knead the dough on a lightly floured surface for about 5 minutes until it becomes soft and pliable.
Divide the dough into 12 equal portions. Roll each portion into a ball, then flatten into thin, round discs.
Heat a large amount of vegetable oil in a deep frying pan over medium-high heat until hot.
Fry the dough discs, one at a time, for about 1-2 minutes on each side or until they puff up and turn golden brown.
Remove the buñuelos with a slotted spoon and drain on paper towels.

Homemade Corn Salsa

Ingredients:
2 cups fresh corn kernels (about 2-3 ears of corn)
1 small red onion, finely chopped
1 red bell pepper, diced
1 jalapeno pepper, seeded and finely chopped
1 large tomato, diced
1/4 cup fresh cilantro, chopped
Juice of 1 lime
1 tablespoon olive oil
Salt and pepper, to taste

Directions:
In a bowl, combine fresh corn kernels, chopped red onion, diced red bell pepper, chopped jalapeno pepper, diced tomato, and chopped cilantro.
Drizzle lime juice and olive oil over the mixture.
Season with salt and pepper, adjusting to taste.
Toss everything together until well combined.
Cover and refrigerate for at least 30 minutes to allow flavors to meld.

Nacho Cheese Beef Wrap😍😍😍😋

🍂Ingredients
1 pound ground beef, lean.
1 cup Nacho Cheese Sauce
½ cup Sour Cream
1 can Rotel, green chilis with diced tomatoes
½ cup chopped green peppers
½ cup diced onions
1 packet Taco Seasoning Mix
Doritos, Nacho Cheese flavored, crushed
4 flour tortilla wraps
Shredded lettuce

🍂How To Make Nacho Cheese Beef Wrap
In a skillet, crumble and brown the ground beef
Cook thoroughly, drain excess fat
Add in the onions, peppers and saute for 4 minutes
Add in the Taco seasoning packet and stir
Add the Rotel and Nacho Cheese Sauce in a bowl
Stir well
Lay four large tortillas out on the counter
Spoon a layer of the nacho cheese mix down the center of each tortilla
Top with some meat mixture, sour cream, onions, peppers, crushed Doritos
Fold in the sides of the tortillas and roll up like you would a burrito.
Heat another skillet on medium heat
Place the wraps into the skillet and toast until crispy on both sides
Serve immediately, topped with your favorite toppings.

Eggplant Rollatini

Ingredients:
• 2 large eggplants, sliced lengthwise into 1/4-inch thick slices
• 2 cups ricotta cheese
• 1 cup grated Parmesan cheese
• 1 1/2 cups shredded mozzarella cheese, divided
• 1 egg, lightly beaten
• 2 cloves garlic, minced
• 1/4 cup fresh basil, chopped
• 1/4 cup fresh parsley, chopped
• 2 cups marinara sauce
• Olive oil, for brushing
• Salt and pepper to taste

Instructions:
1. Preheat your oven to 375°F (190°C). Lightly grease a baking sheet.
2. Arrange the eggplant slices on the baking sheet and brush both sides with olive oil. Season with salt and pepper.
3. Bake in the preheated oven for 15-20 minutes, or until the eggplant is tender and slightly golden. Remove from the oven and let cool slightly.
4. In a medium bowl, combine the ricotta cheese, 1/2 cup of the grated Parmesan, 1/2 cup of the shredded mozzarella, the beaten egg, minced garlic, chopped basil, and chopped parsley. Mix well and season with salt and pepper to taste.
5. Spread a thin layer of marinara sauce in the bottom of a 9x13-inch baking dish.

8. Cover the baking dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
9. Garnish with additional fresh basil or parsley if desired, and serve hot.
