Blueberry mint Galette recipe here! it is so easy and delicious! this is what you need πββββββββ
Crust:ββββββββ
- 500gr all-purpose flourββββββββββββββββ
- 250gr vegan or regular butter (diced, has to be cold) if is salty do not add the salt.ββββββββββββββββ
- 1 egg (cold)ββββββββββββββββ
- 1 tsp of saltββββββββββββββββ
- 30ml of cold waterββββββββββββββββ
- 1/8 tsp baking powderββββββββββββββββ
Ingredients filling: ββββββββββββββββ
- 500gr blueberries ββββββββ
- Mint (I took a whole bunch that had 8 leaves)ββββββββ
- 4-5 tbsp sugar (you can use stevia, be careful with the amount)ββββββββ
- 1 tbsp cornstarch ββββββββββββββββ
Crust Preparation: ββββββββββββββββ
- Place in one bowl the flour, baking powder, and butter and mix with your hand (needs to look like breadcrumbs) add the egg and a small dash of cold water and continue mixing until everything is very well incorporated (If you have a stand mixer add everything and mix it in low-medium speed). The secret to this dough is not to be over-knit. Put it in a fridge for 20min.ββββββββββββββββ
Filling preparation: ββββββββββββββββ
- Mis first the blueberries cornstarch and sugarββββββββ
- Preheat the oven to 180ΒΊC.ββββββββββββββββ
- Place the dough in a pastry tray and fill it with the blueberriesββββββββ
- Cook for 45-50 min ββββββββ
- Optional: If you want that brown look, mix an egg with a pastry brush and "paint" the dough and sprinkle some sugar.ββββββββββββββββ
- Add some powdered sugar and enjoy!ββββββββββββββββββββββββ
