Homemade Chocolate Raspberry Cake Perfect for Valentine's Day ❤️🍫🍓

Ingredients
For the Chocolate Cake
1¾ cups (220g) all-purpose flour
¾ cup (75g) unsweetened cocoa powder
2 cups (400g) granulated sugar
1½ tsp baking powder
1½ tsp baking soda
1 tsp salt
2 large eggs
1 cup (240ml) milk
½ cup (120ml) vegetable oil
2 tsp vanilla extract
1 cup (240ml) hot coffee or hot water
For the Raspberry Filling
2 cups fresh or frozen raspberries
¼ cup sugar
1 tbsp lemon juice
1 tbsp cornstarch mixed with 2 tbsp water
For the Chocolate Ganache
1 cup (170g) semi-sweet chocolate chips
¾ cup (180ml) heavy cream
Garnish
Fresh raspberries
Chocolate shavings
Powdered sugar (optional)
Instructions
1. Bake the Cake
Preheat oven to 350°F (175°C).
Grease and line two 8-inch round cake pans.
In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
Add eggs, milk, oil, and vanilla. Mix until smooth.
Slowly stir in hot coffee or water.
Divide batter between pans and bake for 30–35 minutes.
Cool completely.
2. Make the Raspberry Filling
Combine raspberries, sugar, and lemon juice in a saucepan.
Cook over medium heat until berries break down.
Stir in cornstarch mixture and cook until thickened.
Cool completely.
3. Make the Ganache
Heat cream until just simmering.
Pour over chocolate chips and let sit for 2 minutes.
Stir until smooth and glossy.
Let cool slightly until spreadable.
4. Assemble the Cake
Place one cake layer on a serving plate.
Spread raspberry filling evenly over the top.
Add the second cake layer.
Cover the top and sides with chocolate ganache.
5. Decorate
Top with fresh raspberries and chocolate shavings.
Chill for 20 minutes before slicing.

Peach & Blueberry Yogurt Parfait

Serves 2 large or 4 small parfaits

Ingredients
Blueberry Compote
1 cup (150 g) blueberries
1 tbsp honey or maple syrup
1 tbsp lemon juice
1 tbsp water
Yogurt Layer
2 cups (500 g) plain Greek yogurt
1–2 tbsp honey or maple syrup
½ tsp vanilla extract
Fruit Layer
2 ripe peaches or nectarines, sliced or diced
1 cup fresh blueberries
Crunch Layer
1 cup granola
Garnish
Fresh mint leaves
Extra blueberries
Peach slices
Instructions
1. Make the blueberry compote
Combine blueberries, honey, lemon juice, and water in a small saucepan.
Cook over medium heat for 5–8 minutes, stirring occasionally.
Lightly crush some berries with a spoon.
Remove from heat and cool completely.
2. Prepare the yogurt
In a bowl, mix Greek yogurt, honey, and vanilla until smooth.
Taste and adjust sweetness.
3. Assemble the parfaits

In each glass, layer:

A spoonful of blueberry compote.
A layer of Greek yogurt.
Peach slices.
Fresh blueberries.
Granola.

Repeat the layers until the glass is full.

4. Finish

Top with:

A dollop of yogurt
Extra blueberries

Blueberry Compote
2 cups (300 g) blueberries (fresh or frozen)
1/4 cup (50 g) sugar
1 tbsp lemon juice
1 tbsp water
1 tsp cornstarch mixed with 1 tbsp water
Crumb Layer
1½ cups graham cracker crumbs or crushed digestive biscuits
3 tbsp melted butter
1 tbsp sugar (optional)
Topping
1 cup fresh blueberries
Extra blueberry sauce for drizzling
Instructions
Step 1: Make the Blueberry Compote
Add blueberries, sugar, lemon juice, and water to a saucepan.
Cook over medium heat for 5–7 minutes until berries begin to burst.
Stir in the cornstarch slurry.
Simmer 1–2 minutes until thickened.
Remove from heat and cool completely.
Step 2: Prepare the Crumb Base
Mix graham cracker crumbs, melted butter, and sugar.
Stir until the texture resembles wet sand.
Set aside.
Step 3: Make the Cheesecake Cream
Beat cream cheese until smooth.
Add sugar, vanilla, and lemon juice.
In a separate bowl, whip the heavy cream to stiff peaks.
Fold whipped cream into the cream cheese mixture until light and fluffy.

1 can (20 oz) crushed pineapple in juice, undrained
3 large eggs
½ cup vegetable oil
Topping
1 package instant vanilla pudding mix (3.4 oz)
1 can (20 oz) crushed pineapple, undrained
1 container whipped topping (8 oz), thawed
Optional Garnishes
Toasted coconut
Chopped pecans or walnuts
Maraschino cherries
Instructions
1. Bake the Cake
Preheat oven to 350°F (175°C).
Grease a 9×13-inch baking dish.
In a large bowl, combine cake mix, crushed pineapple with juice, eggs, and oil.

Salad
2 cans (15 oz / 425 g each) chickpeas, drained and rinsed
2 large cucumbers, diced or sliced into half-moons
½ medium red onion, finely diced
2 tbsp fresh dill, chopped
2 tbsp fresh parsley, chopped (optional)
Creamy Dressing
1 cup Greek yogurt
2 tbsp mayonnaise (optional, for extra creaminess)
1 tbsp lemon juice
1 tbsp olive oil
1 garlic clove, minced or grated
½ tsp salt
¼ tsp black pepper
¼ tsp dried oregano
Optional Add-Ins
½ cup crumbled feta cheese
1 avocado, diced
1 celery stalk, finely chopped
1 tbsp capers
Instructions
1. Prepare the vegetables
Wash and chop the cucumbers.
Finely dice the red onion.
