Homemade Chocolate Raspberry Cake Perfect for Valentine's Day ❤️🍫🍓

Ingredients
For the Chocolate Cake
1¾ cups (220g) all-purpose flour
¾ cup (75g) unsweetened cocoa powder
2 cups (400g) granulated sugar
1½ tsp baking powder
1½ tsp baking soda
1 tsp salt
2 large eggs
1 cup (240ml) milk
½ cup (120ml) vegetable oil
2 tsp vanilla extract
1 cup (240ml) hot coffee or hot water
For the Raspberry Filling
2 cups fresh or frozen raspberries
¼ cup sugar
1 tbsp lemon juice
1 tbsp cornstarch mixed with 2 tbsp water
For the Chocolate Ganache
1 cup (170g) semi-sweet chocolate chips
¾ cup (180ml) heavy cream
Garnish
Fresh raspberries
Chocolate shavings
Powdered sugar (optional)
Instructions
1. Bake the Cake
Preheat oven to 350°F (175°C).
Grease and line two 8-inch round cake pans.
In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
Add eggs, milk, oil, and vanilla. Mix until smooth.
Slowly stir in hot coffee or water.
Divide batter between pans and bake for 30–35 minutes.
Cool completely.
2. Make the Raspberry Filling
Combine raspberries, sugar, and lemon juice in a saucepan.
Cook over medium heat until berries break down.
Stir in cornstarch mixture and cook until thickened.
Cool completely.
3. Make the Ganache
Heat cream until just simmering.
Pour over chocolate chips and let sit for 2 minutes.
Stir until smooth and glossy.
Let cool slightly until spreadable.
4. Assemble the Cake
Place one cake layer on a serving plate.
Spread raspberry filling evenly over the top.
Add the second cake layer.
Cover the top and sides with chocolate ganache.
5. Decorate
Top with fresh raspberries and chocolate shavings.
Chill for 20 minutes before slicing.
