Surf-and-Turf Gochujang Mac & Cheese ❤️🧀

🛒 What You’ll Need
For the Cheese Sauce
- 2 slices Swiss cheese
- 2 slices cheddar cheese
- 2 tbsp gochujang
- 2 tbsp cream cheese
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
For the Mac
- 3 cups cooked elbow macaroni, al dente
- 1/2 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
For the Topping
- 3 thick slices seared medium-rare steak
- 4 pan-seared jumbo shrimp
- 1 tbsp finely chopped fresh parsley
👩🍳 Let’s Make It
1. Place a 2 1/2- to 3-quart heart-shaped enameled cast-iron braiser or similar medium lidded skillet on the stovetop over low heat. Make sure your cooked macaroni, seared steak, and seared shrimp are ready to go.
2. Lay the Swiss cheese slices into the warm pan, then layer the cheddar slices on top. Let them soften for about 30–45 seconds.
3. Add the gochujang, cream cheese, garlic powder, and black pepper. Stir with a wooden spoon until the cheeses melt together into a glossy orange-red sauce.
4. Add the cooked elbow macaroni and stir to coat the pasta.
5. Pour in the heavy cream and mix well until the sauce loosens slightly and bubbles gently around the edges.
6. Scatter the shredded mozzarella and shredded cheddar evenly over the macaroni, covering the surface from edge to edge.
7. Cover with the lid and cook on low for 2–3 minutes, until the cheese on top is fully melted and bubbling.
8. Remove the lid. Arrange the steak slices in a neat row along the left side of the pan and place the shrimp in a matching row along the right side.
9. Sprinkle the chopped parsley over the center.
10. Serve immediately. For the hero bite, scoop into the center with a wooden spoon and lift slowly to show the creamy macaroni and dramatic cheese pull.
⭐ Make It Great
- Keep the heat low while melting the sliced cheeses so the sauce stays smooth instead of separating.
- Use very thick, slightly undercooked macaroni so it holds its shape in the rich sauce.
- Pat the shrimp dry before searing so they stay plump and lightly browned, not watery.
- Warm the steak and shrimp before topping the mac and cheese so the finished skillet stays hot and gooey.
