NGL, this is the best cake I’ve had in a long time. Mixing in blackberries & pairing it with my homemade blackberry jam was a lovely idea.

On a side note…. If you’re going to frost a cake like this… freezing it before hand makes putting that last layer on VERY difficult. I always do a crumb coat by default and then freeze it to make the next layer easier to put on (it leaves no crumbs), but I won’t be doing that again if I’m “painting” it like this. The icing wanted to stay on the palette knife instead of the cake, haha! This cake would’ve looked so much better if the buttercream cooperated. I’ll have to give it another go later.
