Chicken Adobo. I know I’ve shot this before but it’s so damn good. 

Not the pepper sauce and not the all purpose seasoning. It’s the unofficial dish of the Philippines in how Jerk Chicken is to Jamaica. Made with boneless chicken thighs, served on white rice (because it’s Filipino) and using the correct eating utensils: a fork and a spoon.

What’s interesting about this dish is there are a couple of base ingredients, there are a ton of ways to make it depending on where in the Philippines you grew up or how your parents taught you. My dad who was from Cebu made this when was I was growing up and never taught me, so I’m chasing down how he did it.

Dirty Martini

2 1/2 ounces gin or vodka
1/2 ounce dry vermouth
1/2 ounce olive brine
2 to 4 olives. Bleu cheese stuffed ones are the best imho

Add the gin or vodka, vermouth and olive brine to a mixing glass filled with ice and stir until well-chilled. Strain into a chilled cocktail glass. �Garnish with a skewer of olives.
