🔥🐔Double Smoked Chicken Tetrazzini!!🐔🔥
I’ll keep this short: if you’re not using your to smoke your leftovers, you’re doing it ALL wrong.
Have leftover chicken? This is the absolute perfect recipe that REALLY amps up a classic. Double smoked chicken and smoked mozzarella nestle into a creamy, saucy pasta, and it all gets a luxurious smoke bath before landing on your plate. Weekday perfection, Traeger style! 👌
🔥Use your favorite tetrazinni recipe or make one up!! Here’s how I did it:
✔️Preheat Traeger to 180°. Smoke sliced leftover chicken for 30-45 min.
✔️Caramelize onions and sauté mushrooms and garlic, remove and set aside.
✔️While chicken smokes, melt butter in large cast iron skillet and stir in flour to make a roux. Add chicken broth, white wine, sour cream, cayenne pepper and nutmeg. Bring to a boil, then lower heat and stir until sauce thickens. Stir in lots of shredded smoked mozzarella and parmesan cheese. Stir until melted.
✔️While sauce cooks, make pasta, drain and set aside.
✔️Chop smoked chicken, add to skillet with sauce, cooked pasta, mushrooms, onions, garlic and a handful of frozen peas. Stir in green parsley or basil.
✔️Top with Italian breadcrumbs mixed with melted butter and parmesan.
✔️Put skillet back on Traeger to smoke for 30 min. Up heat to 450° and cook until tetrazzini is bubbly and topping is golden brown.
✔️Sprinkle with more fresh herbs and enjoy!!
