🔥🐔Double Smoked Chicken Tetrazzini!!🐔🔥

I’ll keep this short: if you’re not using your to smoke your leftovers, you’re doing it ALL wrong.

Have leftover chicken? This is the absolute perfect recipe that REALLY amps up a classic. Double smoked chicken and smoked mozzarella nestle into a creamy, saucy pasta, and it all gets a luxurious smoke bath before landing on your plate. Weekday perfection, Traeger style! 👌

🔥Use your favorite tetrazinni recipe or make one up!! Here’s how I did it:

✔️Preheat Traeger to 180°. Smoke sliced leftover chicken for 30-45 min.
✔️Caramelize onions and sauté mushrooms and garlic, remove and set aside.
✔️While chicken smokes, melt butter in large cast iron skillet and stir in flour to make a roux. Add chicken broth, white wine, sour cream, cayenne pepper and nutmeg. Bring to a boil, then lower heat and stir until sauce thickens. Stir in lots of shredded smoked mozzarella and parmesan cheese. Stir until melted.
✔️While sauce cooks, make pasta, drain and set aside.
✔️Chop smoked chicken, add to skillet with sauce, cooked pasta, mushrooms, onions, garlic and a handful of frozen peas. Stir in green parsley or basil.
✔️Top with Italian breadcrumbs mixed with melted butter and parmesan.
✔️Put skillet back on Traeger to smoke for 30 min. Up heat to 450° and cook until tetrazzini is bubbly and topping is golden brown.
✔️Sprinkle with more fresh herbs and enjoy!!

🔥🦪Grilled Oysters with Mignionette!!🦪🔥

Last weekend I was ventured out to the coast, got my hands on some fresh-from-the-bay oysters...and then proceeded to make the ugliest (but delicious!) oysters known to man. 🤦‍♀️So I wanted to highlight the prettiest ones I've ever made to make myself feel better.😊

Grilled Oysters with Mignionette was one of 'Recipes of the Week' and it remains one of my favorite. Quick and easy, delicious and decadent, there's no easier way to impress your friends. Once you pull these off the Traeger they will disappear in a hurry, promise! 👌

✔️Grill Oysters: Shuck oysters (carefully!!). Preheat Traeger to 450°. While grill preheats, combine butter, minced garlic and salt in a small sacuepan and heat until melted and fragrant. Line cooking sheet with crumpled foil and set oysters snugly into foil. Spoon 1 tsp butter mixture into each oyster and place sheet onto grill. Cook for 4-5 min until butter is bubbly and oyster edges start to pull away from shell. Place them on a bed of rock salt for presentation.
✔️Make Mignionette: Combine minced shallot, micned jalapeno, red wine vinegar and freshly ground black pepper. Set aside.
✔️Chow Down: Top oysters with mignionette and enjoy!!

🔥🍹Smoked Bourbon Lemonade by Rosalie Pareja | Castronskillz]]!!!🍹🔥

This recipe may not have meat in it, but it has alcohol, and in my book, that's just as good. My boozy drink soulmate, Rosalie of the amazing Rosalie Pareja | Castronskillz]], posted this yesterday and I couldn't resist making it right then and there. Talk about Sunday Funday! 💁‍♀️

The best part about smoking on a is that you can smoke any darn thing you want: meat, fish, fruit, Cheez-its, donuts, banana pudding...hell, I smoke WATER for cocktail ice cubes (true story)! So when I saw this called for smoked lemons, I fired up the Pro 780 and got 100% on board. Paired with a little Traeger Smoked Simple Syrup and Bitter End Memphis BBQ bitters, this was the aboslute perfect spring day-drinking gem.

🔥🫒Smoked Citrus-Marinated Olives!!🫒🔥
I have a complicated relationship with olives.
I eat them with reckless abandon straight from the jar, but pick them off my pizza like eating them will bring certain death. I drown them in martinis but steer clear of the tapenade on my charcuterie boards. Like I said…complicated. But there’s nothing complicated about my love for this version of the briny bits: Smoked Citrus-Marinated Olives. 🍊🫒
Using the amazing recipe by , I did what I do and amped them up by smoking them on the at 165° for 1 hour. The secret: make them 1 day in advance to allow the smoky flavor to really develop. These are great on day one but INCREDIBLE on day two. 👌 Enjoy!

🔥🐖Traeger Recipe of the Week: Weeknight “Liquid Gold” Pork Chops!!🐖🔥
I’ll be the first to admit: pork chops are not the fanciest thing I think if when I think of BBQ…but then again, I never thought to cover them in GOLD!! These reverse-seared beauties are bathed in the magic of new Carolina-inspired Liquid Gold BBQ sauce for a quick and easy burst of tangy flavor on a busy weeknight. Bougie Tuesday, here you come!
If you can’t get your hands on the real deal, you can whip up your own Liquid Gold BBQ sauce by mixing together: yellow mustard, spicy brown mustard, apple cider vinegar, ketchup, brown sugar, honey, Traeger Hot Sauce, garlic powder, onion powder, crushed red pepper, salt and pepper. Whatever you use, make sure you fire up your Traeger to smoke, reverse sear or grill your chops!

Is is even St. Patrick’s Day if I don’t post Corned Beef Sliders?? I think not…
I may have today’s beloved corned beef cooking away in my as we speak, but I couldn’t let the day get away from me without throwing it back to last year’s version of my (even more beloved) sliders: Smoked and then braised in a Guinness bath, topped with Smoked Irish Cheddar, spicy brown mustard and horseradish cabbage slaw. The thought of these get me from March to March every damn year…☘️

🔥🐓Traeger Recipe of the Week: Classic (Smoked) Chicken & Dumplings!!🐓🔥
Thank you, , for what has officially become my favorite comfort food recipe ever. This Recipe of the Week came at the perfect time and did not disappoint. Read on for my secret to making it even better!!
You guessed it…the secret is a loooooong smoke bath. Always. I used skinless, bone-in thighs and rather than go straight to browning them, smoked them at 175° for 3 hours before following the recipe by browning them in a cast iron pot to create drippings (will render the removed skin here next time for flavor). Other additions were rosemary and a splash of white wine, but no need to alter the Traeger recipe - it’s nearly perfect!!
Note: this recipe was much easier than I thought it would be to make, and is done 💯% on the Traeger…my favorite way to cook!

🔥🍗🍋Quick Spicy Grilled Jerk Chicken Drumsticks!!🍋🍗🔥
I have a secret. That secret is…not really a secret at all. Like everyone, my life is crazy and busy and normal and insane and mundane - all at one time. So my ability these days to crank out gorgeous spreads on a near daily basis like I used to is getting farther and farther in my rear view. So I’ve decided I’m going to post more “normal” posts about delicious food I make on the (which, honestly, is daily) - whether it’s fancy or not. Let’s take tonight…
I’m flying solo tonight, so a my meal for one ended up being frozen chicken drumsticks that I defrosted, rubbed with Jamaican Jerk rub and threw on the Ranger at 425° for around 30 min until IT of 175°. Finished off with a drizzle of spicy hot aioli, a squeeze of lime and BAM…dinner. A quick snap, and now it’s living in my feed along with the big dogs. Welcome to the big show.

Todays the Big Game and it’s time to pull out ALL the stops! This year I took inspiration from epic new Traeger Provisions Pulled Pork Sliders meal and smoked up my own version of their spread with all the sides and fixin’s. 🐷
Such a fun spread to make, and I love putting my personal touch on it, but next time I’ll definitely get my act together to order it to get delivered right to my door from Traeger itself. Thanks for the inspiration, Traeger!! Now it’s football time…let’s play!!🤘🏈

Who says BBQ can’t be healthy AND pretty? How good do these grilled Thai-spice marinated chicken legs look on top of this veggie-packed salad with grilled citrus dressing?? REAL good, right? Love it when that happens.
I don’t have a long rant about this one, just a fun weekday dinner post that shows how easy and fun it is to whip up a unique meal on the . A quick hot grill on the chicken at 400°, an even quicker grill on the lemons and limes, a fridge full of beautiful, colorful veggies and voila - dinner so pretty it deserves a photo op. 😍
