CRISPY PORK TENDERLOIN BITES
Pork Ingredients:
• 1 Scottsdale Pork Boneless Tenderloin, cut into bite-sized cubes
• 2 tbsp soy sauce or tamari
Crispy Coating Ingredients
• 1 cup cornflour
• 1 tsp smoked paprika
• ½ tsp garlic powder
• ¼ tsp cayenne pepper
• Pinch sea salt and black pepper
To Cook
• Neutral oil, for shallow frying
Method
1. Toss the pork pieces with soy sauce and set aside for 20 minutes to marinate.
2. Combine cornflour, smoked paprika, garlic powder, cayenne pepper, salt and pepper in a bowl.
3. Coat the pork pieces well, shaking off any excess coating.
4. Heat a shallow layer of oil in a frying pan over medium-high heat.
5. Cook the pork in batches for around 5 minutes, turning occasionally, until golden, crispy and cooked through.
6. Drain on paper towel and serve immediately.
