5 Days of Glow

A highball style drink to quench your thirst. Are you in Whiskey and Mandarin….Then this one’s for you! It’s bright, tall, soothing and comes with a kick.

Recipe:
45ml Single Malt Whisky
15ml Mandarin liqueur
20ml Lemon juice
15ml Black tea syrup
90ml Ginger beer

Garnish: Mandarin wedge sitting on top.

Method: I shake all ingredients with ice, then add ginger beer into shaker, swirl and strain over a clear cube of ice.

Bark & Bitter

The combo of Cinnamon and Grapefruit has always been a winner to me. There’s also something about the way cinnamon bark syrup transforms a Gin drink. Warm, woody and perfectly balanced by the tartness grapefruit. The Dry Vermouth plays a good part by adding dryness and mouthfeel.

The Drink:
30ml Gin
30ml Dry Vermouth
30ml Grapefruit juice
15ml Cinnamon Bark syrup
15ml Lemon
1 dash of Peychauds bitters
90ml Soda water

Garnish: Half a dehydrated grapefruit slice

Shake all ingredients except soda water with ice. Add soda water in shaker, give it a swirl, then pour into a collins glass with clear ice.

Pago Pago

A 1940s tiki classic by Jeff Beachbum Berry and adapted by Paul McGee. I’m really digging the Tempus Fugit , Crème de Cacao in this one, just the 7.5ml can lift up those Rum notes and mingle the beast of Chartreuse. On paper it looks wild but when you try it, it’s awesome!

🍍 I used fresh pineapple juice in mine but originally it’s with 4 quarter sized pineapple chunks. It’s also 60ml of Unaged Jamaican Rum but in video I only recorded 30ml….opps

Mango-Mania

A delicious Mango style tiki drink. Using a blend of Rums like a Mango Rum, blended aged Rum, and a 151 Demerara Rum. It’s boozy but really softens out. Definitely a mood setter for tropical vibes 🌴.

The Drink:
30ml Mango Rum
15ml White aged Rum
15ml 151 Demerara Rum
45ml Mango Néctar
30ml Coco lopes
15ml Lime juice
3 dashes of Angostura bitters

Flash blend with pebble ice. Pour into a brandy snifter glass, top with pebble ice and garnish with a healthy bouquet of mint. Don’t mind the fake flowers 💐 haha.

Recreating an iconic classic like the Penicillin and turning it into something more warm and floral. I still wanted to keep the smokiness you get from it but with a more robust, smoke dried over pinewood taste. The honey plays a good part as well, bringing floral notes.

THE DRINK:
60ml Lapsang Souchong infused Rye
15ml Osmanthus tea infused Honey
7.5ml Ginger syrup
22.5ml Fresh Lemon juice

Shake all ingredients and strain over a chilled rocks glass with ice. Garnish with a dehydrated lemon wheel

💨 I cold Infused Lapsang Souchong tea with Rye Whiskey for 12hours, then fine strain. You get this dark beautiful Rye, you can simply just enjoy on its own.

🍯 Create a 3:1 honey syrup then add Osmanthus tea inside and let infused overnight. You may leave the tea pedals inside or omit. I chose to leave inside.

DUSK TO DAWN

Was really feeling a Dark & Stormy style cocktail and created this one using a Pinot Rum as a float. Played quite well with the spices from the ginger and Falernum

Recipe:
45ml Pinot Rum (float)
15ml Falernum
15ml Lime
90ml Ginger beer

Method: build in a collins glass with your finest clear ice. Start by adding ginger beer, lime and Falernum, give it a store to mix. Lastly float your Pinot Rum over the top to create a layer. Garnish with a dehydrated lime wheel.

GREEN LIGHT

A cocktail for any season, it’s refreshing, bright, tart and aromatic! I’m using Wild Tasmanian Gin. Similar to the Pink Light cocktail I made last month. Ginger, cucumbers, and kaffir leaf work so well with Gin, I can enjoy these flavour all day long.

Recipe:

45ml Gin
15ml Dry Vermouth
20ml Ginger syrup
22.5ml Lime
Kaffir leaves
Cucumber

Garnish: Kaffir lime leaf, cucumber & dehydrated Lime.

Method: In a shaker, muddle kaffir lime leaf and cucumber together. Add ingredients, followed by ice. Shake and fine strain over pebble ice. I used a small bowl size glass but you may use any of your favourite glassware.

ALMOST FAMOUS

An awesome riff on the iconic Paper Plane cocktail, founded on Tiki Modern Tropical Cocktails by . The Almost Famous cocktail was created by Laura Bishop and it’s a winner 👏🏻. The Overproof Jamaican Rum is a must, then your usual suspects to back it all up.

Recipe:
30ml/1oz Overproof Jamaican Rum
30ml/1oz Yellow Chartreuse
30ml/1oz Aperol
30ml/1oz Lime juice

Shake with loads of ice and enjoy in your favourite glass.

What a great night at and congratulations 👏🏻. They’ve just opened their brand new kitchen, and it completely levels up the experience. Think elevated bar bites that actually match the quality of what’s in your glass.

If you’re in the eastern suburbs and looking for a spot that delivers both great drinks and food, this one’s definitely worth the visit.

SILK ROAD SWIZZLE

A fun tropical concoction combining a few of my favourite flavours, Rum, Mango, Herbal and Lapsang Souchong, which really gives it this earthy, smokey flavour. It’s an awesome way to enjoy tiki drinks in a fun mystical way.

The Recipe:
45ml White rum
7.5ml yellow chartreuse
30ml mango nectar juice
22.5ml lime juice
15ml Lapsang souchong syrup
Absinthe rinse over top
Saline

Flash blend ingredients with pebble ice, open pour into a tall tulip glass. Top with pebble ice and garnish with a bouquet of mint. Lastly give it a few spritz of Absinthe over the top.

Lapsang souchong is actually not that easy to find where I’m at but I’ve seen some similar black teas that can also capture a similar taste, make sure it’s smokey.
