Thanks to everyone that came down to the opening of Personal One at Lunar studios in Sydney last Thursday. A superb crowd showed up and many beautiful images were sold on behalf of . Introducing

In 2020 during lockdown I started to document my daily cooking escapades on my personal instagram . Fulfilling a need to occupy myself and keep my ‘hand in’ during a difficult time when my whole industry was shut down. I created and it became a place to store my favourite recipes as well as family classics going back to the 1970s. I felt it was time to find a new name and a new home that celebrates this family food legacy and makes it accessible to everyone. Many people have asked me to publish a cookbook but in the end I feel that this digital format suits the content well and becomes an instantly accessible archive that anyone can cook, any day of the week with the ingredients and methods at your fingertips.The food you find in these pages will be easy, delicious and may become favourites in your own kitchen. Follow for easy access to the whole library.

The new name as you will see is derived from my trusty 12in black cast iron skillet in which I do the majority of my cooking. It was cheap, will last forever and has taken on the rich patina of hundreds of cooking sessions, turning out countless crowd pleasers over the years. I encourage you to invest in this simple piece of gear that will give a lifetime of faithful service on stove, fire or in the oven. It’s even induction friendly.

Doomsday cookbook P13. Northern Thai Chicken curry. Worthy of the effort spent making the paste. So fresh and fragrant compared to the jarred stuff. For the paste just blitz 40g ginger with turmeric,shallot,white part of lemongrass,garlic,shrimp paste,cumin and chillies that have been deserted and soaked in water for 2hrs. To make curry, fry paste in coconut oil for a few mins.Add chicken pieces and star anise. Stir. Add 400ml water. Reduce heat and simmer 20 mins. Add tamarind,sugar, fish sauce and rest of ginger. Simmer another 20 mins. Season with fish sauce or tamarind extract if needed. @ Newtown, New South Wales
