Korske printed the show this week. Every piece is exquisite; Korske is a phenomenal printer. Each decision - the paper, the print tone, the sizing - was made together while we looked at each scan. Printing 35mm film at this size is bonkers. 13 days to go. Put your NAs in!!!

Ben. Black Pearl.
Most people who meet Ben get playful Ben. He’s the kinda guy who you REALLY want serving you a drink. Funny, clever and intense. Privately, he is also one of the most grounding and kind people in the whole wide world. That dichotomy was captivating to capture. And really hard. Really really hard. Proud of this one.

When you're established, brand sponsorship is straightforward. When you're a relatively unknown artist, so much more weighs in the balance. Bombay Sapphire has placed faith and strength in my work, and it's aim to unite our industry through art. This faith has enabled me to bring the pros together to create a hospitality experience never before seen in Sydney. On March 22nd, we are going to see the soul of our industry lit up on the walls of a space we love and adore.

FOUR WEEKS TO GO. On the 22nd March, I get to show you everything that's been simmering inside me for years on the walls of Bulletin Place. I've brought together a killer crew uniting the hospitality industry with the film photographic industry. We've got Bulletin Place Bar on space and vibes, Alex Gondz on drinks, Rewind Photo Lab on film expertise, Ben Ali Ong on prints, Alex Dyriw on lighting and countless hospo folks who are contributing with support, ideas, and their time. Bombay Sapphire put their faith in me and empowered me to create this space for you, and it's going to be unreal. RSVP soon, spots are disappearing quicker than wine glasses when you need one.

There have been many days since I started bartending that I've felt inadequate. Some of these feelings were valid. Many of them were learned. For the past few years I've attempted to strip these back, with little success. Then I sat down at my first Coleman's Academy. Women's voices filled the room, with laughter, nerves and strength alternating in the crowd. Paige Aubort moved from person to person. Drinks went out, ci******es were smoked, rap squats were pulled in that infamous mirror. And as the night kicked off, a blanket fell on the room. Kylie Ashton spoke candidly about Momofuku: its steep rise to success, and following devastating plateau. Hannah Sharman-Cox spoke about creating London Cocktail Week...from her bed...with her PC on her lap. These women allowed me to identify with achievement by being truthful about it: the fear, the insecurities, and the realities. This continued with every Coleman's I attended. And meanwhile, I worked steadily back home. Coleman's Academy gave me the balls to create Silk and Grit. Paige Aubort taught me to face my fear in order to trump it. Turns out everyone feels like they're not good enough. Trust me, you absolutely fu***ng are.

Silk and Grit is here. I'm exhibiting at Bulletin Place on Sunday March 22nd. We're transforming the bar into a gallery showcasing the beauty of our world. The crew of Bulletin and Bombay Sapphire have gotten behind me to make this a reality, and I can't wait to show Australia what makes our industry so powerful. LET'S DO THIS. To all my hospo family, which is every single person behind the stick, on the floor, in the kitchen and on the door: take care of yourselves over the next 10 days. I keep hearing the age-old reasoning for the exhaustion, the 12 hour days, the demanding customers and the waves of rushes: "it's the silly season". Be kind to yourselves, your crew, and your staff. To all my non-hospo family: tip your server, remember your manners, and stop breaking s**t!
