It’s that time of year again. Cabane à sucre is one of my most favourite months in Quebec. Known as a sugar shack in English it is the quintessential experience for anyone visiting Quebec. Sap is collected from maple trees & boiled into maple syrup (Quebecs gold). Food halls bustle with dishes like ham, bacon, pork rinds, scrambled eggs, beans, sausages, pickled veg, bread & sometimes potatoes. Desserts include sugar pie, maple taffy & pancakes. Live music makes me feel at home with the sounds of fiddles and accordions holding a strong Irish/scottish influence. The sugar shack is rooted in Indigenous practices but is blended today with French-Canadian traditions. I’ve gone to this Cabane many a time, you’re sure to have fun
