Our awesome fellow Leithians gave us some salmon... here is how I smoked it. I highly recommend keeping skin on for smoking. A longer brine can be done and the extra fat allows for a buttery flavour as well as acting like its own plate... no parchment paper required. I do that here to keep it from sticking and falling apart.
