В марте 2015 друзья рассказали про бургерную с крафтовым пивом и уютным летним двориком . Я была в это время в Цюрихе и все сложилось как всегда неожиданно. Мне была интересна история человека из Америки, приехавшего в Европу и начинающего свой бизнес в незнакомом городе.

Меня в целом всегда завораживали истории экспатов. Люди, которые меняют точку на карте и начинают все с самого начала. Словно у них есть право прожить несколько жизней в одной. Почему нет?

Майк все начал с самого начала в Цюрихе, одним из первых в городе настолько серьезно занялся крафтовым пивом в начале 2010х. Как обычно и бывает в этих историях, встречаясь с неизбежным сопротивлением системы и всеми сопутствующими сложностями.

Все получилось и к 2015 году уже во всю работало уютное заведение в двухэтажном домике с прекрасной летней площадкой, где готовят вкуснющие бургеры и подают самый разнообразный крафт. С момента нашего разговора прошло четыре года и на карте Цюриха появился ещё один Fork&Bottle. А на стрит фуд фестивалях появился ещё один постоянный участник - минималистичный фудтрак Fork&Bottle. Кто там гуляет по Цюриху? Скорее бронируйте столик на ужин/бранч/ланч - оно стоит того!

➖What is the main thing in "Secret Food Tour" - food, secret or tour? Why?
➖"We felt that the perfect tour should be a mixture of delicious food, interesting history and a few little surprises along the way. This is how the idea of Secret Food Tours was born, as we wanted to have a tour that offered people amazing food of the local area but also showing some secret and hidden places that they wouldn't find themselves. So far this has been a big success and people really love it."

➖What was the "beginning point" of the Tour? Who started the tour, what’s the story behind?
➖"The tours were started in 2013 by myself and my business partner Nico. As avid food fans, we wanted to start a tour to share the very best of local food in the beautiful surroundings of iconic cities. Friends from other countries would often ask for our suggestions and tips where to eat the best traditional food or find the greatest restaurants and pubs. These friends enjoyed this experience so much that we wanted to share this with other people too."

➖Who is the main audience? Is it changing somehow through the time?
➖"The tour is very popular and our main audience is very broad, we have had many children, grandparents and everyone in between attend and love our tours. Our average person is someone who loves to try new/tasty food and is interested by the city they are visiting."

➖What kind of London people gonna see through your tour?
➖"They will experience new food tastes and try refreshing drinks in markets, pub and hidden restaurants. They will have a new appreciation of the food culture here and top tips on how to enjoy the city's culinary scene."

➖Describe the most usual londoners dinner?
➖"Londoners now have changed their eating habits. Eating a sushi is just as common as eating fish and chips. However, Londoners love to try new things and experience food in new ways. So the 'usual' dinner is more of a sociable experience then just what they are eating."

Знаете, бывают такие места в этом мире, где ты можешь спрятаться. Которые странным образом работают как персональный пространственно-временной портал, укрывающий от шероховатого прошлого и беспокойных мыслей о будущем. Их нельзя найти специально, они никак не отмечены на карте. Чаще всего на карте таких мест как раз и не существует вовсе. Они сами выбирают тебя. Сами появляются, когда действительно очень нужно. И в этот момент ты уже точно знаешь, что попался.

В этот раз попались под Калининградом. Каждый приехал со своей миссией. Cложный и многослойный город историй, заломов и неровных поверхностей. Baltic, you got me. Кафе у моря "Дача" выловила из калининградских дней. На запрос «к морю, чтобы не было людей», мир отозвался «Дачей». Я никогда не слушала северных холодных морей. Они шумят своим светлым песком и ершатся холодной мощью.

Ну и дальше, само собой, поплыли простые и понятные картинки: утро, море, кофе. Или наоборот, если желаете. Вечер. Море. Глинтвейн. Рыба (хороша она там, чертовка). Смотря когда попадёшься в капкан. Ещё одно #офискафе, куда хочется вернуться. Книгу собрать, переосмыслить проект или просто послушать ершистое Балтийское. Плюс один к портальным точкам на гугл-картах. #калинград
