I tried "vin chaud", or mulled wine, for the first time a few weeks ago at a restaurant near Les Halles called Le Baltard, it was very bitter and had a raisin and lemon taste. It was served with sugar, but I quite liked it bitter. Definitely interesting. I’m told there are a few different kinds of vin chaud, which are sweet with cinnamon, might try that some time.
