One Pot Coconut Lemon Chicken Rice π₯₯ππ
This fragrant one-pot rice is packed with juicy chicken, creamy coconut milk, and a burst of fresh lemon flavour. Itβs easy to make, incredibly delicious, and perfect for a comforting family meal!
Ingredients
* 1 kg chicken thighs
* 2 tbsp Kashmiri chilli powder
* Β½ tsp turmeric powder
* 1 tbsp black pepper powder
* 2 chicken stock cubes (1 for the marinade, 1 for the rice)
* Juice of 1 lemon
* Salt to taste
* 3β4 tbsp cooking oil
* 1 tbsp ginger-garlic paste
* 1 large onion, finely chopped
* 4β5 green chillies, slit
* 1 tsp chilli powder
* Β½ tsp turmeric powder
* Zest of 1 lemon
* 400 ml coconut milk
* 4 cups soaked basmati rice
* Water (as needed to cook the rice)
* Fresh coriander leaves, chopped, for garnish
Method
1. Marinate the chicken with Kashmiri chilli powder, turmeric, black pepper, 1 chicken stock cube, lemon juice, salt, and a little oil. Let it rest for at least 30 minutes.
2. Heat the oil in a pan and fry the chicken until lightly browned. Remove and set aside.
3. In the same pan, sautΓ© the ginger-garlic paste for 1 minute.
4. Add the chopped onion and green chillies, and cook until the onions are golden brown.
5. Stir in the chilli powder, turmeric powder, and lemon zest. Cook for another minute.
6. Pour in the coconut milk, add the remaining chicken stock cube, and squeeze in a little more lemon juice.
7. Add the soaked basmati rice and enough water to cook the rice.
8. Arrange the fried chicken over the rice.
9. Bring everything to a boil over high heat, then reduce the heat to low, cover, and cook until the rice is fluffy and the chicken is tender.
10. Garnish with fresh coriander leaves and serve hot.
