Baked jam star bread from a few weeks ago. It’s such a lovely type of bread to make, I highly recommend. The jam filling goes down so well with kids (well mine away), but there’s many other fillings that can be used - Nutella, cinnamon sugar, chocolate, cream cheese, just to name a few 🍯

Hello 👋🏻 It’s been a while!

I hope you all have a lovely Easter. We spent most of the school holidays in Ireland with my husbands family, and caught up with a few friends, which was lovely. I had intended to get back into baking last week but I needed to take a little time out for some self-care. My anxiety and depression increased a bit when we got back home, and I felt really overwhelmed with life, so I gave myself some time to rest and settle back into routine.

This week has been really productive though and I’ve made a couple of my old recipes, including this mint chocolate tart. It’s rich and decadent, and everything I love in a dessert. I’m starting to write blog posts now for my tested recipes, so I hope my website will go live soon.

What a strange week of weather we’re having. Monday was very mild and sunny, and I was outside gardening, and then the past three days we’ve had snow/sleet showers on and off. While shooting this cheesecake I was watching the horizontal snow out of the window. I suppose March and April can still be very unpredictable.

I remade my mango and passion fruit cheesecake this week to fine tune the recipe. I spent so long feeling like I had to make a completely new dessert every time, so I’m quite enjoying remaking some of my old favourites, particularly since my photography has improved. I’ll add a carousel with the previous image from 2020 🌼

Like so many others, I’ve really struggled to settle enough to bake recently. I’m an anxious person and I spend a lot of my time worrying about everything and anything. The cost of living is sky rocketing, which is super stressful to me, and watching the horrific events unfold in the Ukraine over the past couple of weeks has played on my mind so much. My heart breaks for those, and their family members, who are effected by the war.

I did bake this chocolate and coconut tart on Saturday and it helped once I got going.
