Baked Hasselback Halloumi in Hidden Veg & Lentil Sauce. If you love Halloumi but don’t like it when it goes squeaky, try baking it. It develops a slight crust, especially when hasselbacked and the inside will be soft. The saltiness of halloumi works really well with this rich hidden veg tomato sauce which I’ve added a pouch of puy lentils to for extra protein. Finely chop the vegetables into the sauce and by the time it’s been in the oven for 45 minutes, veggie adverse members of the family won’t know what went in! This is delicious served with crusty bread.

This photo was taken by at the end of day 4 of last weeks book shoot. I thought it captured how I was feeling as I took this dish from the oven to the table to be photographed - happy, relieved it was all going so well, and an incy bit tired!

INGREDIENTS for 4-6:
3 blocks Halloumi
1 onion finely chopped
3 garlic cloves crushed
1 aubergine finely chopped
2 bell peppers finely chopped
1 courgette finely chopped
1 tbsp balsamic vinegar
2 cans chopped tomatoes
1 pouch puy lentils
2 tbsp pesto
Fresh basil

Soften the onions in a oven proof pan for a few minutes before adding the garlic and other veg.

Cool on a medium heat for a few minutes then add the lentils, tomatoes and balsamic. Season generously and bring to a simmer.

Hasselback the Halloumi by making cuts 3/4 way through the blocks at 1/2cm intervals.

Nestle the Halloumi into the sauce, drizzle with a little olive oil and bake at 180 for 45 minutes.

Finish with a drizzle of pesto across each hasselback Halloumi and fresh basil.

.. and, it's a wrap! Approximately 40 recipes created, styled and photographed over 4 full days in Kent with Anna's Family Kitchen and her efficient helpers, Sarah & Anita. Phase 1 is complete.

What happens in the back room during a shoot, hugely influences the efficiency of a food shoot and what I can achieve overall for my customers. When you have several days of shooting a large number of dishes like this, a cohesive team makes an enormous difference and these ladies have ensured that all food was prepared, cooked and delivered on time every time, allowing Anna the freedom to style as she wished and me, the headspace to concentrate on the photography technicals.

The dishes are healthy, wholesome and perfect for families with busy lives and having been on site during prep, I can vouch that they are delicious too!

Thank you Anna, Sarah & Anita for all of your hard work this week. I'm very happy with the results we've achieved together and can't wait to see this brand new cook book in print in September.
