I love having these in the freezer and I take them out as I need them such a lovely breakfast for before school with some berries on the side! And of course with butter!

Apple Cinnamon & Raisin Scones

Makes 8 large scones

Ingredients

400g self-raising flour
1 tsp baking powder
70g caster sugar (⅓ cup)
1 tsp ground cinnamon
120g cold butter, cubed
2 eggs
1 tsp vanilla extract
120g full-fat Greek yogurt (½ cup)
1 apple, peeled and chopped into small pieces
80g raisins

For the top

1 egg, beaten

Method

Preheat the oven to 190°C fan and line a baking tray with baking paper.

Add the self-raising flour, baking powder, sugar and cinnamon to a large bowl and mix.

Add the cold butter and rub it into the dry ingredients with your fingertips until the mixture resembles coarse breadcrumbs.

Add the eggs, vanilla and Greek yogurt. Mix gently until the dough is just beginning to come together.

Add the chopped apple and raisins and gently fold through. Don’t overwork the dough. It should be soft and slightly sticky. If it’s genuinely too wet to shape, add a little extra flour, 1 tbsp at a time.

Turn the dough onto a lightly floured surface and gently shape it into a thick round, about 3–4cm thick.

Cut into 8 large wedges and transfer to the lined baking tray.

Brush the tops with the beaten egg.

If you have time, chill them for 15–20 minutes before baking for a better rise.

Bake at 190°C fan for 20–25 minutes, until well risen and deep golden on top. If checking with a thermometer, the centre should be around 94–96°C.

Leave to cool on the tray for about 5 minutes before transferring to a wire rack.

These breakfast cookies have been so handy to grab for breakfast when I’m in a hurry. Goes so well with my morning coffee! Add mixed seeds as well! I didn’t have any..
Banana Peanut Butter Breakfast Cookies

Makes about 6 cookies

Ingredients

1 large ripe banana, mashed
70g smooth peanut butter
30g maple syrup (about 1½ tbsp)
1 tsp vanilla extract
75g rolled oats
10g cornflakes, lightly crushed
40g mixed nuts, roughly chopped
30g dried cranberries/raisins I did a mix
30g dark chocolate chips
½ tsp cinnamon
Pinch of sea salt

Method

Mash the banana until smooth, then mix in the peanut butter, maple syrup and vanilla.

Add the oats, nuts, cranberries, chocolate chips, cinnamon and salt and mix well.

Gently fold through the crushed cornflakes last, trying to keep some nice chunky pieces.

Leave the mixture to sit for 5–10 minutes so the oats can absorb some of the moisture.

Scoop into 6 portions on a lined baking tray. Press each one down into a thick cookie shape, as they won’t spread much while baking.

Press a few extra flaked almonds and chocolate chips into the tops.

Bake at 180°C fan for 10-12 minutes, until golden around the edges but still a little soft in the centre.

Leave on the tray for about 10 minutes to firm up before moving them.

This was actually amazing! And was perfect in a wrap for lunchbox the next day!
The seasonings I used in the turkey were
Salt & pepper
Smoked paprika
Ground coriander
turmeric
Oregano

Breakfast tacos on repeat 🌮🍳

Serves 1

Ingredients

2 mini wraps
4 sausages
2 rashers bacon
½ avocado
1 egg
Baked beans

How to make

Remove the sausages from their casings. Press the meat from 2 sausages into a thin, even layer over one side of each wrap.

Place the wraps sausage-side down in a hot frying pan and cook until the sausage is golden and completely cooked through. Flip and cook the wrap side for another minute or two until lightly toasted.

Cook the bacon until crispy and scramble the egg.

Top each wrap with avocado, crispy bacon, scrambled egg and baked beans.

These are somewhere between banana bread and a chocolate brownie. Super soft, chocolatey and such a good way to use up those ripe bananas! Using all my fave ingredients from ad/brand ambassador

Banana Brownies Traybake 🍌🍫
Ingredients

3 large very ripe bananas (or 4 small)
120g (½ cup) salted butter, melted
100g (½ cup) sugar
2 large eggs
1 tsp Dr. Oetker Vanilla Extract
120ml (½ cup) milk
190g plain flour
30g (¼ cup) Dr. Oetker Cocoa Powder
1 tsp baking powder
½ tsp bicarbonate of soda
½ tsp salt
50g (⅓ cup) Dr. Oetker Chocolate Chips, plus extra for topping

Method

Preheat your oven to 180°C fan and line a baking tin with baking paper.

Mash the bananas in a large bowl until mostly smooth.

Add the melted butter and sugar and mix well. Add the eggs, Vanilla Extract and milk and whisk until combined.

Add the flour, Cocoa Powder, baking powder, bicarbonate of soda and salt. Fold everything together until just combined, being careful not to overmix.

Fold through the Chocolate Chips.

Pour the mixture into your lined tin and smooth out the top. Sprinkle over plenty of extra chocolate chips.

Bake on 180° for 20 mins or until set in the centre and a skewer comes out with a few moist crumbs.

Leave to cool for 15 mins and Slice into squares

These freeze brilliantly too. I love popping individual slices into the freezer, then they’re ready to grab whenever you want one. ❤️

The BEST sweet and sour I’ve ever made. If you like it more saucy, you can double up on the sauce.

Sweet & Sour chicken (serves 3 or 2 very hungry people 😂)

INGREDIENTS

-3 chicken breasts, chopped into bite-sized pieces
-Cornflour, enough to coat the chicken
-Salt & white pepper

1 onion, chopped
2 cloves garlic, finely chopped
1 pepper, chopped
1 carrot, thinly sliced

SWEET & SOUR SAUCE

80g (⅓ cup) ketchup
80ml (⅓ cup) apple c***r vinegar
50g (¼ cup) sugar
15ml (1 tbsp) soy sauce

TO FINISH

Spring onions, sliced
Sesame seeds

METHOD

Coat the chicken pieces well in cornflour and season with salt and white pepper.

Mix all the sweet & sour sauce ingredients together in a bowl and set aside.

Heat a little oil in a large frying pan over a medium-high heat. Add the chicken in a single layer and leave it alone until nicely golden underneath. Turn and cook until golden on the other side and cooked through.

Add the onion, garlic, pepper and carrot and cook for another couple of minutes. I like to keep the veggies nice and crunchy, so don’t overcook them.

Pour in the sweet & sour sauce and toss everything together. Let it bubble for a few minutes until the sauce thickens slightly and coats the chicken.

Finish with sliced spring onions and sesame seeds and serve with rice. 👌

I could eat this every single day. Tastes incredible with nectarine or pear too! Or sometimes I add some berries.

Warm Apple & Cinnamon Yogurt Bowl 🍎

Ingredients – serves 1

200g Greek yogurt
1 apple, chopped
Small handful walnuts, roughly chopped
1 tsp butter
½ tsp cinnamon
2 tbsp oats
1 tbsp maple syrup
1 tbsp peanut butter
Sprinkle of mixed seeds

Method

Add the apple and walnuts to a frying pan with the butter and cook for a few minutes until the apple starts to soften.

Add the cinnamon, oats and maple syrup and cook for another minute or two, stirring until everything is warm, sticky and slightly caramelised.

Spoon the Greek yogurt into a bowl and pile the warm apple and walnut mixture on top.

Sprinkle over the seeds and drizzle with peanut butter. If your peanut butter is too thick to drizzle, pop it in the microwave for a few seconds to loosen it.

I recently had Brookies & Salted Caramel Ice Cream and immediately knew I had to recreate it at home 🤤
Using Carnation UK and Ireland Condensed Milk makes it so easy to get really creamy homemade ice cream, with no ice cream machine needed. It turned out UNREAL! I would one million percent make it again! What flavour should I recreate next?

Brookies & Salted Caramel Ice Cream

(Serves 24)

1100ml Whipping cream
1 can (397g) Carnation Condensed Milk
40g chocolate chip cookies, chopped small
80g brownies, chopped small
Drizzle salted caramel sauce

Method
-Whip the whipping cream until soft peaks, then fold in the Carnation Condensed Milk.
-Keep some of the chopped cookies and brownie bites aside for the top, then fold the rest
through the ice cream mixture.
-Spoon half the mixture into a container and swirl over some salted caramel sauce.
-Add the remaining ice cream, then finish with more salted caramel and the reserved cookie
a brownie pieces.
-Freeze until firm, approx 4-6 hours or overnight then scoop and enjoy!
