5 kg Mutton Curry Recipe | मटन करी रेसिपी | Pahadi Mutton Curry Recipe | How to make mutton curry
🥘 5 Kg Pahadi Mutton Curry Recipe
(Serves ~20–25 people)
Ingredients:
Mutton (गोश्त) – 5 kg (with bone, preferably fresh pahadi mutton)
Onions (प्याज़) – 1.2 kg (finely sliced)
Tomatoes (टमाटर) – 1 kg (finely chopped or pureed)
Curd (दही) – 750 g (whisked)
Mustard oil (सरसों का तेल) – 500 ml (or mix with ghee)
Ginger-Garlic paste – 200 g
Green chilies – 15–20 (slit)
Coriander leaves – 1 big bunch (chopped)
Dry Spices:
Turmeric – 5 tbsp
Kashmiri red chili powder – 6 tbsp
Coriander powder – 8 tbsp
Cumin powder – 3 tbsp
Garam masala – 2 tbsp
Black pepper powder – 1 tbsp
Bay leaves – 6
Black cardamom – 6
Green cardamom – 12
Cinnamon sticks – 4–5
Cloves – 10–12
Salt – to taste
Water – 2.5–3 liters
Method:
1 Marination (2–3 hours minimum)
Wash mutton well.
Mix with curd, 2 tbsp turmeric, 2 tbsp red chili powder, salt, half of ginger-garlic paste.
Rest in fridge or cool place.
2 Cooking Base
Heat mustard oil till it smokes, cool slightly, then add whole spices (bay leaf, cardamom, cinnamon, cloves).
Add sliced onions and cook till deep golden brown.
Add remaining ginger-garlic paste, fry till raw smell goes.
Add tomatoes + dry masalas (turmeric, chili, coriander, cumin). Cook till oil separates.
3 Adding Mutton
Add marinated mutton pieces, bhuno (भूनना) on high flame 25–30 minutes till it releases juices and oil separates.
4 Cooking (Dum style)
Add 2.5–3 liters hot water. Cover with tight lid.
Slow cook on dum (low flame) 1.5–2 hrs. (If pressure cooker, 8–10 whistles medium flame).
5 Finishing
Add garam masala, green chilies, coriander leaves.
Simmer 10 minutes. Curry should be thick, dark, and aromatic.
🍽️ Decoration & Serving Ideas:
Serve in a big handi (पारंपरिक देगची/बर्तन) lined with fresh banana leaves.
Garnish with:
Fresh coriander leaves (finely chopped)
Thin ginger juliennes
Green chili slit (for rustic pahadi look)
A spoon of ghee on top for shine
Keep small copper/kansa bowls for serving for authentic pahadi feel.
Side accompaniments: hot steamed rice, pahadi roti/mandua roti, onion-lemon salad.
