In India, every state has its own way of making this delicacy, giving it different names such as Kashmiri Bakharkhani and Rajasthani Bakharkhani. However, in Bihar—especially in the city of Patna—the cuisine is considered among the best in the country. In the lanes of Lodhi Katra, Bakharkhani is still baked using age-old traditions and skills.
When maida is mixed with khoya and sugar, it forms a soft, fluffy dough. This dough is then shaped into layers by hand and baked in a tandoor, giving it an earthy taste and aroma, before being garnished with sesame seeds.
Every year during Ramzan, the demand for Bakharkhani rises, making it an essential part of the state’s festive delicacies. It is Bihar’s way of celebrating Ramzan—with taste and heritage.
