People who bake use any excuse to heat up their ovens. They bake a cake to crown someone’s birthday, labor over cookies to celebrate a holiday, and whip up brownies because everyone loves chocolate. Life is not worth living if I cannot have Pici with Ragu Sauce again!!!
Pici is possibly the only original Tuscan handmade pasta. It is made by pulling on a piece of dough made of durum wheat flour (usually no egg) until you have a lengthy string the size of a bucatino without the holes. It’s similar to the Venetian bigolo, so quite substantial. In Tuscany, it is regularly eaten with a ragu of wild boar, hare, rabbit or pork.

Raisin Cookies are very popular, probably because of their soft and chewy texture and buttery sweet flavor. These homey, raisin-packed, old fashioned drop cookies are a baker's friend as the batter is quickly made and then all you do is drop spoonfuls onto a baking sheet. The cookies are baked until their centers are still soft and just beginning to turn brown yet their edges are a lovely golden brown color.

Ingredients:

2 cups (260 grams) all purpose flour

2 teaspoons baking powder

1/4 teaspoon salt

3/4 cup (170 grams) unsalted butter, at room temperature

1 cup (205 grams) firmly packed light brown sugar

1 large egg, at room temperature

1 teaspoon pure vanilla extract

3-4 tablespoons milk

1 cup (125 grams) dark raisins

Instructions:

Raisin Cookies: Preheat oven to 375 degrees F (190 degrees C). Butter or line two baking sheets with parchment paper.

In a separate bowl, whisk together the flour, baking powder, and salt.

In the bowl of your electric mixer (or with a hand mixer), beat the butter until smooth and creamy. Add the sugar and beat until soft and fluffy (about 2 minutes). Beat in egg and vanilla extract. Scrape down the sides of the bowl as needed. Add the flour mixture to the batter and beat until incorporated. Add enough milk to make a soft batter. Then add the raisins and beat until combined.

For each cookie, drop about one tablespoon of batter onto the prepared baking sheet, spacing the cookies about 2 inches (5 cm) apart. Bake the cookies for about 12 - 14 minutes, or until the tops of the cookies are still soft with just a touch of color, yet the edges are golden brown. Remove from oven and transfer the cookies to a wire rack to cool.

Makes about 26 cookies.

Hi, it's been quite some time 😄. I'm back with many new projects and photos.

In Italian cuisine, ragù is a meat-based sauce that is commonly served with pasta.
Ragù was created by Alberto Alvisi in the 18th century.
The most typical are ragù alla bolognese. Other types are ragù alla napoletana, and ragù alla Barese(sometimes made with horse meat).

The Karen tribe, which is unofficially called the Long Neck tribe, came to Thailand from Burma, when escaping war and violence in their country. They are world famous for their women, who wear golden rings around their necks. From the time when they are 5 to their 21st birthday, each year one ring is added to their collection. At the end, their necks get so long that these women are often called “dragon ladies”, or just “long necks”. According to Karen people, the longer the neck the more beautiful the woman who wears them is.
When the Thai government officials saw these women on their doorstep, they felt it was going to be a great business opportunity for Thailand. They gave Karen visas and work permits, they leased them some land and took pretty photos of the women standing outside of their bamboo huts. Then, they used these photos in shiny, colourful brochures, advertising the northern region of Thailand and told the women to smile to tourists, who were willing to pay money to see something different and exotic.
Karen are not allowed to leave their villages. Until very recently they weren’t allowed to go to school, or go to local doctors, or hospitals. Their situation is getting better slowly, but they are still kept in their little villages, without the permission to leave. If they want to stay in Thailand, they must stay on the land they were given.😞
