Now there is in Amsterdam a supermarket that only sells vegan products,

I’ve mentioned a while ago that I am transitioning to a plant based diet, which is not vegan but composed in its majority by meals made without animal products.

Having a supermarket selling only vegan products brings a lot of variety for creating great meals.

It’s not difficult to create a meal that is absolutely delicious, nutritious and vegan.

🍽 Here you can see what I had for lunch today: 👉 Roasted sweet potato, beans, tofu cubes, stir fried vegetables, fresh salad and hummus. 😋

Vegan Fresco launched a nice challenge this week and I am participating with this post.

I am planning to post on my blogs (pt/en) meals with recipes for inspiration on meals

Today’s photo is a plant based breakfast I had last Sunday. A delicious bow with soy & coconut yoghurt, granola, seeds, fresh fruits and peanut butter.

Today I would like to talk about “The National week without meat” that will happen in The Netherlands next week from 08/03 until 14/03. Have you heard about it?

I’ve mentioned on my Instagram Stories some days ago that I am transitioning to a plant based diet. Plant based is not the same as vegan, although a lot of people use it as a synonym.

My reasons for moving to a plant based diet are mainly health and the environmental impact. I will talk more about it later.

But the environmental impact of meat consumption is one of the targets from the National week without meat. It’s an initiative from Isabel Boerdam from

The initiative promotes a flexitarian diet, where meat and fish can be alternated with vegetarian meals. The believe is that one day without meat through an entire year has a big impact on our planet. The week without meat is an event that happens every year in The Netherlands and the goal is that this initiative will bring awareness and help to reduce the meat consumption in The Netherlands throughout the years.

You can subscribe to participate in the event. They calculate the positive environmental impact that this week without eating meat has based on the number of participants. We are going to participate with the 4 of us. We asked the kids, 9 and 6, if they wanted to join, and they said yes.

We want to bring awareness about meat consumption to the kids, but we don’t want to in anyway force them to it. So, with all voluntary participation, next week will be all week without meat here at home. I am super excited. It’s the second time we participate, but at this time the kids are older and understand better what we are doing.

Hi! Yesterday I published my first post on “what I ate in a day”, and It included home made hummus at lunch. Today I am sharing the recipe!

This hummus is delicious. I highly recommend it. 😋

I stopped buying ready made hummus and switched completely to home made. It’s so easy and quick to make; and much more healthy and nutritious. You are in charge of the ingredients when making your own hummus.

Here the recipe for the hummus! It’s based on the recipe from the Instagram feed from

* 215 grams of cooked chickpeas
* 100 ml of aquafaba (liquid from cooking the chickpeas or from the can) - or sub water
* 4 tablespoons of tahini
* 1 garlic clove
* Juice of half lemon
* 1/2 teaspoon of salt
* 1/4 teaspoon of cumin powder
* Sprinkle of black pepper

Blend everything in a food processor until smooth. Adjust the seasonings to your taste (lemon, salt, cumin and black pepper).

Optional: Serve with a drizzle of olive oil and zaatar.

I hope you enjoy this recipe.

And you? Is there anything you stopped buying ready and switched to home made? Let me know in the comments.

Today’s photo is my entry to the Food Photography Challenge from This is the third week from the challenge and first theme. This week’s theme is UGLY DELICIOUS and the first challenge in the week is to photography a curry or a stew, which are difficult subjects to photograph for it’s look not naturally beautiful.

I wanted to challenge myself and create a photo from the “real” stew, with basically no stying. The stew in the pan with all the “dirty” from cooking it in the pan. I also wanted to capture a food that is related with my personal family background. So here I photographed an aubergine stew, something that my mother always cooked at home while I was a kid and I love it. The dish is very simple, you use onions, garlic, aubergine and tomato; then you can complement with whatever you have at home and want, if you want. Here I added yellow peppers and champignons.

The stew is in the pan where it was cooked and I had it for lunch. Absolutely delicious. 😋

And you? Do you like aubergine stews?

Absolutamente delicioso. 😋

E você? Gosta de ensopados de berinjela?

And now, I am bringing the second photo of the day, this coffee photo that is my entry to the Food Photography Challenge from This is the third theme from the first week, “COFFEE, tea or chocolate”.

I do like coffee, tea and chocolate, but had to go with coffee. ;) I am passionate about coffee, from brewing it in different ways to drinking all its variations.

Coffee for me feels cozy and that’s what I tried to capture in this picture. A simple moment of coziness.

And you? Do you like coffee? What feeling coffee brings to you?

Today’s photo is my entry to the Food Photography Challenge from This is the second theme from the first week, “OKRA, green chillies or green beans”.

Chillies are not something I eat, but my husband .duc, happily volunteer to eat them, after all, I “had” to photograph them. ;)

And you? Do you like spicyfood?

E você? Gosta de comida apimentada?

This sweet potato “toast” photo is my entry for the Food Photography Challenge from We are on the first week and first theme of the challenge which is “YAM, potatoes or sweet potato”.

When I saw the theme I knew I would photograph sweet potato. I recently discovered how much I like it. I’ve being eating it much more frequently as a carbohydrate source on my meals. It’s soft and lightly sweet. It goes well with a lot of things. You can turn it into a sweet or savoury dish.

I like cooking them in the microwave. Depending on the size, from 5 to 8 minutes it’s ready to eat. I make some holes on it, brush the surface with a little bit of olive oil, salt, black pepper and rosemary, then cook in the microwave on high. After cooked, just slice it, and have fun with the toppings. Here I went with cottage cheese, cherry tomatoes, basil and pumpkin seeds. All seasoned with fleur de sel and black pepper.

It was my lunch today, followed by a salad and a vegetable soup.

And you? Have you tried sweet potato as a “toast”?

I am participating in a Food Photography challenge named Compostion Essentials . If you are following my Stories for the past 6 days, you saw all the steps for the creation of these 2 images from the banana pancakes I am presenting here today.

It’s being a lovely journey participating in this challenge, planning and executing the photo shooting step by step. I’ve discovered new tools throughout the challenge, as Bublup for creating the mood boards; and the colour wheel tool from Canva, which helps with picking up a colour palette for the scene you are planning.

Challenges are also a great opportunity to see what other food photographers from the community are doing and learn from each other.

I am looking forward to the online workshop that Rachel from will give tomorrow, as I am sure, I will learn more from.

The recipe from this banana pancake I learnt with my nutritionist, and you can find it on the Recipes highlight from my profile. These are the ones make with eggs, not vegan.

📸 What a great day! This is me in front of my photos hanging in the wall, in the photo exposition in the Photography event from . ⠀

The event was in February, a little bit before the quarentine started in The Netherlands. ⠀

I had no idea what was about to come. I got sick for 2 months during the quarentine, probably with Covid-19, although I wasn’t tested. ⠀

Seeing my photos printed in the wall, meeting people and talking about photography was really nice. ⠀

I am very happy now to be fully recovered and back to my family 👨‍👩‍👧‍👦, work 💻📸 and exercises 🏃🏻‍♀️💪.⠀

Recently, I’ve been in a oatmeal phase. I am having oatmeal for breakfast everyday. (recipe below). I make it with oat milk, raisins and cinnamon; and top with sunflower and pumpkin seeds, chia seeds, flaxseeds and fresh fruit. Banana and blueberries being my favorites.

I add no sugar to it. It’s just not necessary. I quit eating sugar 4 months ago. I am talking about it on my Stories today. Check it out if you wanna know more about it. ☝️

And you? What’s your favorite breakfast?

___________

* Pinch of cinnamon/ Pitada de canela
* flaxseeds, chia, pumpkin and sunflower seeds to taste / chia, linhaça, sementes de girassol e de abóbora a gosto
* Fresh fruits to taste / frutas frescas a gosto

Mix the oats, milk, raisins and cinnamon and bring to the microwave. Cook for approximately 2 minutes on high (do 1 minute at a time until desired consistency).
Top with the seeds and fresh fruits and another pinch of cinnamon.
Enjoy!

Bom apetite!
