This shoot was inside the mall in Albuquerque. Therefore our space was very limited in those tiny kitchens at the food court trying to shoot this. A lot of sweat (due to the heat of that kitchen) was put into this shoot but I really like the use of ingredients to accentuate the dish.

Arrived in NM late september to trial run this cross nation tour of restaurants I was about to embark on. My first restaurant was this bar and grill called Lizard Tail Brewing company that was just one of three locations. Talking to some of the guys on staff they told me about the music and jazz nights that they throw on at some of the venues, as well as their membership program and craft beers. Overall an extremely welcoming environment and I wish I had more days in the city to fully experience what they had to offer. The food was delicious and the best way to start such an unstable journey.

Still the best chicken and waffles i’ve ever had.
“Ever since Roy was adolescence, he had dreams of owning his own business. He started his first lawn mowing company at 12 years old called "Roy's lawnmowing." As he got older, he worked a few different jobs, but none that left him satisfied or made him feel content. In 2017, Roy and his family experienced the loss of their 6 month old son. After this incident, he realized that life is too short to settle and be unhappy, so he went for his dream of owning a restaurant in May of 2018, and hasn't looked back since.”

Tyler was given the opportunity to open up The Surf Bar in the back of a boutique his senior year of high school. Having been to Hawaii, California, and Florida, he had tried açaí bowls from these places and always enjoyed eating them. When the opportunity came, there was no doubt. Since the opening in 2018, with the help of his wife, AJ, family, community members, and Team members, The Surf Bar has evolved into what it is. We wouldn't be here without your support.

Their bio from the website reads:
“The cuisine has a foundation in French and European technique with an emphasis upon using locally sourced, high quality, fresh products.

Chef Huy came to the United States in 1989 and his family opened a Chinese restaurant in 1994. In 2000, Huy started his career in japanese and sushi cuisine at Fuji Sushi Bar. Huy was trained by one of Fuji's finest chef. In 2007, Huy was promoted to Head Chef at Fuji. He left in 2009 to help a friend open Flying Fish Sushi Bar. During his time at Flying Fish, Huy continued to polish his fine art in sushi and trained many up and coming established chefs. With more than 20 years experience combined in hospitality business, Chef Huy and his former partner opened Akira Sushi Bar on February 25th, 2012. Chef Huy now owns and operates Akira Sushi Bar as the head chef. Antoinette Baking Company - Remember having the runniest nose that day, wore a mask and gloves to the shoot for extra caution and soaked through the mask by the end the shoot. Worth the discomfort though because these shots are some of my favorite I captured in Tulsa.

Their Story: In 2012 childhood friends Molly & Andrea started Antoinette Baking Co. in a small space in Tulsa’s Brookside neighborhood. Molly realized her passion for baking during her pursuit of the perfect macaron, which is documented in her blog (it was 2009 & blogs were life) The Velvet Macaron. This obsession is still alive & well. Andrea started making bread & cakes for friends & family at home which turned into making a 6 tier wedding cake for her sister. Needless to say she realized that was crazy & she couldn’t get enough. The bakery moved to the Tulsa Arts District in 2015 & has loved growing with the community. Being a part of everyday celebrations is why we love opening our doors each morning.

Pancho Anaya Bakery - Had the most delightful conversation here learning of the rich history behind the establishment dating clear back to the village Sahuayo, Michoacan, Mexico in 1912. Its tradition of fine bread grew from generation to generation, becoming one of the largest bakeries in Michoacan. In 1998, Francisco “Pancho” Anaya founded Pancho Anaya Bakery in the U.S., with the vision not only to make pastries rich in ingredients and taste, but also to promote family values and unity, accompanied by its own delicious café de olla. I had the pleasure of trying Semita de Piloncillo which is the cinnamon like bread in the second image that was invented in that village.
