{Chicken Pot Pie}

Wintertime in Virginia is always unpredictable. Closing out our fifth year here, it's been our experience that you can expect more rain than snow. Today was one of those cold, rainy winter days. A fresh homemade pot pie is always a welcome meal in our house, especially on days like today.

When we were living in Germany, I found this little stamp at one of my favorite stores. I've tried it on a few things over the years, but it's still seeming to be a learning curve. (Perhaps I should try it more often for practice.) It looked relatively okay on the before, but not so much on the after.... oh well! Taste matters more than looks, and it was delicious.

{Pumpkin Bread}

I'm a firm believer that pumpkin bread should be enjoyed year-round... however, its October and it's just expected to be baked and devoured at least once. Our first batch was at the very beginning of the season because you can't properly celebrate autumn without a loaf of freshly baked bread of some sort.

We are a little too impatient in this house, so we ignore the part where it says to "wrap and store overnight before slicing." It still tastes just as delicious whether you wait or not. ๐Ÿ˜‰

What better way to celebrate Father's Day and the final round of the U.S. Open than with some little greens?!

Key lime pie is a favorite of Jordan's, so much so, that he gets one every year on his birthday instead of cake. Actual key limes are tough to come by most of the year, so a substitute of equal parts lemon and lime juices is necessary to get the right flavor. Freshly juiced citrus is best! Add a little green food coloring, a drop of black writing gel, a tiny ball of fondant, and a partially peeled and trimmed treat stick, and you get these adorable little personal key lime pie greens. ๐Ÿ˜

{Cupcakes}

This year, the birthday boy decided against cake and instead wants a cherry cobbler... that post will come tomorrow. Since friends are coming to celebrate with us, we agreed on some cupcakes to share. The only specifications I received were that they be chocolate with vanilla frosting.

I delivered and then some!

My gingham BH&G cookbook is always my first go to for cake recipes because it never lets me down. Chocolate cake with creamy white frosting. I added a touch of Stir water enhancer to the red frosting, giving it a hint of pomegranate cranberry flavor. I also managed to plan far in advance this year and grabbed some bunny peeps at Easter time, specifically so I could make little Pikachu treats for my Pokรฉmon loving boy.

{blueberry scones}

I have been wanting to make scones for years now, but for some reason, I never did... until this morning! We are pretty much fans of all things blueberry around here: muffins, pancakes, waffles, pie, cobbler, and just plain blueberries. Of course we have eaten bakery-made blueberry scones before, so I knew it would be something the boys would enjoy.

While insomnia was paying a visit in the wee hours of the night/morning, I decided to scour Pinterest for a recipe that I could try. Thankfully, I always have butter and a way to substitute buttermilk on hand.

The family gave them their stamp of approval (all having seconds), however I'm not completely sold on this recipe just yet. Everything gets a second chance around here, so I will be making them again to see if a second batch will come out better; if not, it will be on to the next recipe to try!

This quiche... this quiche tested me today; beginning to end was a test of my patience and sanity.

I had every intention of baking it yesterday so that we could enjoy it with our Easter brunch, but that didn't happen.

My intentions then changed to waking up super early to get it baked and in the fridge to cool/set so that it would be done in time for Easter brunch, but that didn't happen either.

We planned to have quiche for dinner instead, but did I get it done early enough in the day to enjoy it chilled and set? Nope. We had fresh from the oven quiche for dinner, which was a first for me. I still prefer quiche cold.

I tried a new pie crust recipe today as well, making the whole experience even more, er, interesting.

So here we are! A few stages of my from scratch quiche, baked in my new pie dish (that dare I say, I love more than my Pyrex!).
