This is a tough one. Tough pics to edit, tough to post, tough to describe. I’ll keep it brief. Cooking for Tommie taught me that leadership means genuine friendship, respect, compassion, and humility. It’s rare that you meet a family like the Koukoulis ohana, but once you do, you never let them go. Uncle’s Hawaiian Grindz has and will always be my favorite restaurant 🫶 mahalo

As awful as insomnia is, sometimes it means waking up during a dream about the waters of Iceland. I could try my hand at dream interpretation a la Daniel, but instead I think I’ll just enjoy this lovely memory in the canyons of Eldjá. It was cold, rainy, and took a lot of effort to get to. But man… look at that view.
