There is a moment, before the first course arrives, when a restaurant tells you what kind of evening you are about to have.
It is rarely the menu.
More often, it is the way you’re welcomed. The pace of the room. The feeling that everything is unfolding exactly as it should.
That was the first thing I noticed at Ascend Prime Steak & Sushi.
From the moment we arrived, the experience felt intentional. A genuine welcome. A manager who took the time to walk us through the space before showing us to our seats, allowing the room to make its first impression before the food ever could. Nothing felt rushed.
We found ourselves seated at the counter in front of Chef Jesse Correa ( ), close enough to watch service unfold in real time. Between courses, he shared where ingredients came from, the thinking behind the menu, and the choices made long before guests arrive. There was no performance in it. Just someone who clearly cares about the work.
The tasting menu reflected that same approach. The Robata Eye of Rib showed the discipline behind live fire, with smoke and richness held in check by a clean sense of balance. The kitchen also adjusted the course to accommodate my needs seamlessly, without turning it into a moment. The Aburi Sake Toro Nigiri, finished with shiso chimichurri, was delicate and precise. And the Toasted Jasmine Rice Pavlova brought the evening to a close in a way that felt measured rather than extravagant.
What stayed with me most, however, wasn’t a particular dish.
It was the hospitality.
The kind that never asks for attention, yet shapes the entire experience.
Some restaurants leave you remembering what you ate.
The best ones leave you remembering how you felt.
Ascend reminded me of the difference.
