Smoky, cheesy, and packed with flavor 🔥 These Grilled Chicken Quesadillas are the ultimate easy comfort food—crispy on the outside, melty on the inside 🌮🧀

GRILLED CHICKEN QUESADILLAS

Ingredients
Chicken Marinade:
4 chicken thighs
Salt, to taste
1 tbsp paprika
½ tsp black pepper
3 tbsp olive oil

Quesadillas:
3 large flour tortillas
16 oz Gouda cheese, shredded
1 cup caramelized onions
⅓ cup cilantro, chopped

Instructions
1.Season chicken thighs with salt, paprika, pepper, and olive oil. Grill 10–15 min until cooked and slightly charred. Slice.

2. Add chicken, Gouda, caramelized onions, and cilantro onto half of each tortilla. Fold over.

3. Grill 3 min per side until golden and cheese is melted. Slice and serve warm

I partnered with Cheese from Europe his holiday season to make my perfect cheese board 🧀

I used a mix of distinctive European varieties — Cabrales, Majorero, Murcia al Vino, and Tetilla — to create a vibrant, flavorful centerpiece that pairs beautifully with winter fruits, and good company.
