BROCCOLI CHOCOLATE CAKE ๐Ÿฅฆ Vegan, Low Fat & Low Calorie Density!

Ingredients
1 head of broccoli
1/2 cup soy milk
1 cup oat flour
2 tbsp flaxmeal
4 tbsp maple syrup
2 tbsp cacao powder
1 tsp vanilla extract
1 tsp baking powder
Pinch of salt

Frosting:
2 ripe bananas
2 tbsp cacao powder
1/4 cup peanut butter powder
2 tbsp maple syrup

1. Steam broccoli until tender and blend with soy milk. Add the remaining ingredients and mix well. Bake in the oven at 180 Celsius for 30-35mins.
2. Mix together frosting and add to the cooled cake! Top with raspberries and enjoy โœจ

HIGH PROTEIN VEGAN MOZZARELLA ๐Ÿ”ฅ Vegan, Oil Free & Low Calorie Density!!

Ingredients:
1 box of silken tofu
2 cloves of garlic
1/3 cup soy milk
2 tbsp apple cider vinegar
1/4 cup nutritional yeast
1 tsp salt
3 tbsp tapioca starch
1 tbsp kappa carrageenan (to firm into balls)
Tomato
Basil

1. Blend all mozzarella ingredients until smooth. Heat low and slow in a pot, making sure to keep stirring until it comes together and becomes stretchy.
2. Put 1/4 cup onto some cling film and twist to make a ball shape. Place in ice cold water for 20mins until completely cooled.
3. Serve with tomato and basil to make your low fat Caprese salad for maximum weight loss.

You can eat HUGE volumes to get and stay lean!

When I was 60lbs heavier, I thought the only way to lose weight was to restrict, count calories and workout like a mad person. I would eat such tiny portions all day long and then binge on ice cream and chocolate at night because I was starving. It was not sustainable or fun.

Fast forward a couple of years and I have learnt that weight loss means eating MORE food, not less.

It's all about eating the right food! And the best way to get lean is by eating foods that are low in calorie density (potatoes, rice, oats, fruit, veggies, beans and lentils) -that way you can eat as much as you need to be satisfied without eating a tonne of excess calories.

As a volume eater who loves her food, it's like a dream come true ๐Ÿ˜†

EPIC VEGAN FAKEAWAY ๐Ÿ”ฅ Oil Free & Low Calorie!!

This one is for everyone who loves a good takeaway, but wants to eat healthier, lose weight AND it only takes 20mins to throw together ๐Ÿคฏ

Ingredients
1 medium potato
100g extra firm tofu
1 tsp cornstarch
1 head of broccoli
1 carrot
2 cups of chopped mushrooms
1 tbsp soy sauce
2 cloves of garlic
A thumb of ginger

Sauce:
1 tbsp soy sauce
1 tbsp maple syrup
1 tbsp rice vinegar
1 tsp gochujang
1 tsp white miso
1/4 cup water
1 tbsp cornstarch

1. Chop your potato into thin fries, and tear the tofu into pieces (coat in 1 tsp cornstarch and salt) and pop them both into the air fryer (or oven) for 20mins or until crispy. Mixing half way through.

2. Now chop the veggies and add to a pan with minced garlic, ginger and 1 tbsp soy sauce. Sautรฉ for 5-10 mins or until tender.

3. Mix together the sauce ingredients (apart from the cornstarch) in a pan on low until it starts to bubble. Then add the cornstarch with a splash of water to form your slurry and add it to the bobbling sauce. Stir constantly as it will thicken up super fast!

4. Add tofu and sauce to the veggies and pour over the chips. Add optional vegan kimchi and sesame seeds and enjoy!

And itโ€™s that simple! Super delicious and fantastic for weight loss ๐Ÿ˜†
