Here's a recipe for a delicious chicken and watercress salad featuring tomatoes and onion:
Ingredients:
2 boneless, skinless chicken breasts
Salt and pepper, to taste
1 tablespoon olive oil
1 bunch of watercress, washed and trimmed
1 pint cherry tomatoes, halved
1/2 red onion, thinly sliced
1/4 cup crumbled feta cheese
2 tablespoons chopped fresh parsley
2 tablespoons lemon juice
2 tablespoons olive oil
Salt and pepper, to taste
Instructions:
Preheat your oven to 375°F.
Season the chicken breasts with salt and pepper on both sides.
Heat the olive oil in an oven-safe skillet over medium-high heat. Once the oil is hot, add the chicken breasts and sear for 2-3 minutes on each side until browned.
Transfer the skillet to the preheated oven and bake for 15-20 minutes, until the chicken is cooked through.
Remove the skillet from the oven and let the chicken rest for 5 minutes. Then, slice it into thin strips.
In a large bowl, combine the watercress, cherry tomatoes, red onion, feta cheese, and chopped parsley.
In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper to make the dressing.
Drizzle the dressing over the salad and toss to coat.
Top the salad with the sliced chicken and serve immediately.
