So Voodoo Works, Maelstrom’s Farm’s test kitchen, got a hold of a brand spanking new #4 skillet from . (Our initial dealer order arrived today.) It’s a cute little thing and perfect for mini deep dish volcano cornbread and plating skillet meals.

There’s a lot going on in the pic sequence. First it was cleaned and completely coated with vegetable oil. Then a dab of lard was added and into the oven for preheating it went. You can see some grey iron where the factory seasoning rubbed off. No big deal and it should be expected to a degree with a new pan. The rest of the pics are cornbread alchemy.

It is absolutely essential to clean and oil a new skillet religiously and without fail every single time you use it. It’s how you get that non stick seasoning layer and protection from rust. The process cannot be rushed no matter what anyone tells you. Slow and steady wins the day!

Did my cornbread stick? Nope, it flipped right out. That’s what that dab of lard does for ya. It also helps the pan season.

Oh yeah, cornbread is highly recommended as one of the first things to cook with a new skillet. One of my recipes is included in the pics.

There’s nothing better than a deep dish Jimmy Red cornbread. Voodoo Works, the test kitchen at Maelstrom’s Farm worked a little culinary alchemy in the preparation and baking of this one. Rested batter, a touch more heat and a lil rendered bacon fat were put into play.

Yesterday I decided to make one of my “volcano” deep dish cornbreads in my Estee. I filled her up and the volcano erupted! LoL. “Lava” spilled out and landed on the base of the oven. Smoke filled the air as the pyroclastic flow went forth! It was glorious. Until….

the smoke alarm went crazy.

So today I made another one. In Eric. The deep walled 8 inch pot should keep any future eruptions under control.
