While the kitchen is still cool, can lentils, chickpeas & beans for summer protein salads…
I’ve been canning and cooking them in so many ways for every season, but I especially love canning a big batch for summer when I’m too hot and too busy to cook!
I put together a little guide with the basics, pressure canning them, protein notes, a few varieties, and easy ways I like to use them in recipes for summer.

Spring radishes are popping up in the garden, which means it’s time for my favourite hot pink pantry pickle!

Crunchy, tangy, slightly spicy! They are perfect for summer picnics, burgers, salads, and my favourite picnic at the beach snack boards.

Instructions:
Slice your radishes, pack into jars, and cover with a simple vinegar brine using apple cider vinegar or white vinegar. Water bath can for shelf-stable jars of bright pink goodness all season long.

I’m looking at my grocery receipts lately wondering… what is going on? How do six items end up costing $55? Some of the things we buy regularly seem to have doubled, if not tripled, in price.🤯

It’s no surprise that grocery costs are pushing more families back into the kitchen out of necessity!

The truth is, knowing how to cook from scratch is becoming a survival skill again, not just a hobby or a trendy thing to do. And when you look at the ingredient lists on many convenience foods, that’s another reason to get back to making food yourself!

I know some people think homemade means more work but financially it just makes sense. Homemade soups, pasta sauces, snacks, desserts, and simple pantry staples can save a surprising amount of money over time. Even something as simple as growing a few herbs in the garden can cut costs (and they are easy to grow)

This is exactly why learning to cook from scratch matters now more than ever. Learning how to grow some of your own food, preserve it, and turn simple ingredients into healthy meals gives you more control over both your grocery budget and what ends up on your family’s plates.

ā€˜Big plates’ are one of our favourite ways to serve meals. We toss together seasonal vegetables, proteins, grains, and fresh herbs on a large platter for everyone to share.

It’s easy, beautiful, saves on dishes, and makes mealtime feel fancy when actually it couldn’t be simpler.

The ultimate slow-simmered vegetarian Heinz-style baked beans!
Delicious and rich and made from scratch with navy beans, brown sugar, mustard, tomato, and apple cider vinegar for that classic old fashioned flavour! šŸ˜‹ yum

The kind of comfort food that pairs quite nicely with a thick slice of fresh sourdough… ā˜ŗļø

I am obsessed with beans and stocking my pantry with them. They don’t cost much and are incredibly healthy, plus I much prefer eating food out of glass jars over tins!

Ingredients:
Beans:
* 4 cups dry navy beans (or great northern beans)
Sauce:
* 3 cups vegetable broth or water
* 2 ½ cups passata
* ½ cup ketchup
* ½ cup packed brown sugar
* 2 tbsp apple cider vinegar
* 1 ½ tbsp yellow mustard
* 1 tbsp dry mustard
* 2 tsp onion powder
* 1 tsp garlic powder
* 3 tsp salt

Health is the glue that holds it all together. It’s okay to prioritize daily self-care without guilt! Move your body when you have energy, instead of putting it at the bottom of the to-do list when you’re already run down and too tired to show up for yourself.

As the busiest season of the year approaches for me, I’m committing to exercise in the morning before I get too tired!
