Ingredients

✔ 2 cups baked beans
✔ 4 eggs
✔ 1 cup self-raising flour
✔ 1 onion (finely chopped)
✔ ½ teaspoon white pepper
✔ Salt to taste
✔ Brown sugar
✔ Paprika
✔ Grated cheddar cheese
✔ 1 spoon chutney
✔ Cooking oil for frying

Method
Whisk eggs in a mixing bowl.
Add flour, brown sugar, salt, white pepper, and paprika.
Mix in baked beans, onion, cheese, and chutney.
Heat oil over medium heat.
Spoon batter into hot oil.
Fry for 3–4 minutes per side until golden brown.
Drain on paper towels and serve warm.

For extra-crispy fritters, add a little more flour or deep-fry rather than shallow-fry.
